Few people might realize it, but the reason why hands are something that appear a lot in Bresson's movies is that the connection between the spaces is made by hands. Bresson is making cinema not only an art that explores sight and hearing but also touch

He didn't "like" them. It was all one of his ways to express human thoughts, emotions, intentions, actions and the consequences of such actions; instead of recurring to the tired, obvious, stupid way of conveying those things through artificial, melodramatic, manipulative, redundant, sentimental mediums such as dialogues, wailings, cries, shouts, tears by artificial actors a great number of movies have employed and continue to do.

There's even a mysterious scene in Mouchette where the main character is holding up her hand for no apparent reason while having a conversation with someone.

Sometimes a soften touchings can hurt you or your hearth. Because people always hide your intention you believe them all time but they are deciever lier...like my ex love. Now the sense of his touching, in last times, break my heart untill ı forget him but ı live him and ı am dying because of him. M.💔

I've seen ~7 Bresson films. It's safe to say I am not a fan. But I still love many of the details in his films, such as these reoccurring shots of hands in his work. If he only allowed more boiling performances, rather than keeping everything at room temperature regardless of context, then Au Hasard Balthazar would probably be one of my favorite films. If you believe in auteurs above all other lines of thought, I can see how others don't care how he managed performances in his films. But I think it's rather silly, personally.
