Guacamole & Black Bean Burrito - Restaurant Style Burrito! (with The Fresh Chile Company)

Hey Chile-Heads! Today, we’re collaborating with The Fresh Chile Company to bring you this delicious restaurant-style burrito recipe: a Guacamole & Black Bean Burrito topped with Red Chile Sauce from The Fresh Chile Company. They were so gracious to share a few products with us, and today I’m using the Medium Fresh Hatch Red Chile Sauce (freshchileco.com/products/fre...) to smother the burritos and give them that New Mexican flair. This dish uses simple ingredients such as canned black beans, onion, bell pepper and avocado and is so easy to prepare. This is also a great recipe for meal prep! Did I also mention it’s vegetarian?! Guacamole & Black Bean Burrito - Restaurant Style Burrito!
Ingredients:
2 tbsp olive oil, separated
½ red bell pepper diced
¼ of a yellow onion diced
1 can of black beans (liquid preserved)
1 tsp chile lime salt
Salt and pepper to taste
1 ½ cups shredded sharp cheddar cheese
½ jar of The Fresh Chile Company medium red chile sauce
¼ cup cornstarch swirlie ( 1 teaspoon cornstarch mixed with ¼ cup water)
½ - 1 cup water
2-3 flour tortillas
Shredded cheddar cheese
Guacamole:
2 ripe avocados
¼ onion diced finely
1 jalapeno deseeded and diced finely
1 tomato deseeded and diced finely
¼ tsp garlic powder
Salt to taste
Directions:
Heat 1 tsp of olive oil in a medium skillet and add diced bell peppers and yellow onions. Saute until just softened, about 2-3 minutes. Next add one can of black beans, including the liquid from the can. Cook for another 5-7 minutes. While the beans are cooking, stir in 1 tsp of chile lime salt. Once the beans have thickened up, set them aside and prepare the guacamole.
To prepare the red chile sauce, add a half jar of The Fresh Chile Company medium red chile sauce to a medium saucepan and bring up to a low boil. Once it is boiling, add in ¼ cup of cornstarch swirlie and continue cooking for another 5 minutes. After 5 minutes, turn to low heat.
Warm two or three flour tortillas on a comal, or skillet. Now we are ready to assemble!
Lay a tortilla on a flat surface and add some cheese and the black bean mixture to one side, the side closest to you. Now add some guacamole on top of the mix and begin to fold. Start by folding the side closest to you over while tucking in the sides, all the while rolling it up. Keep the seam side down and place on a plate. Cover the burrito with the red chile sauce and top with plenty of cheese. Next, carefully place the burrito and the plate into the broiler (on low) and cook for 2 minutes. Do not step away from the oven at this point, as it can easily burn. Keep an eye on it. Carefully remove the burrito plate from the oven and top with lettuce, tomato, sour cream and some diced onion - whatever toppings you like! Enjoy!
