🔸 Ingredients:
2 russet potatoes
4-5 strips of bacon
3 slices of cooked ham
4 tbsp vegetable or canola oil
½ tsp onion salt (divided in half)
1 tsp salt (divided in half)
¼ tsp pepper (divided in half)
½ jar of Green chile sauce (The Fresh Chile Company - Green Chile Sauce)
4-5 eggs
¼ tsp water (add to eggs if you are scrambling them)
½ cup shredded cheddar cheese
🔸 Instructions:
Add two russet potatoes to a pot of cold water and bring up to a boil. Once the potatoes start to boil, reduce the heat slightly to a low boil and continue cooking for about 10 minutes. You should be able to stick a fork into the potatoes, but they won’t be fully cooked.
While the potatoes are cooking, place 4-5 strips of bacon onto a skillet. Cook them until they are crisp, or however you like your bacon cooked. Remove the bacon and set aside to drain on a paper towel. Now add three slices of diced ham to the same skillet and cook until browned. Set the ham to drain on a paper towel as well.
Remove the potatoes and run under cold water so they will cool slightly so you can peel them. Once you have peeled the potatoes, you can grate them using a cheese grater to make hash browns.
Add 2 tbsp of oil to a large skillet on medium heat. You can also add a pinch of salt here; I’ve found that this helps prevent the hash browns from sticking to the pan. After a couple of minutes (the oil is hot), add the hash browns to the pan. Next, add ¼ teaspoon of onion salt, ½ teaspoon of salt, and ⅛ teaspoon of freshly ground black pepper. Cover the potatoes and let them cook for about 3-5 minutes before flipping them over. After flipping, add the remaining half (¼ tsp) of onion salt, half (½ tsp) of salt, and half (⅛ tsp) of freshly ground black pepper. Cook for another 5 minutes.
This is a good time to put about half of the jar of green chile sauce in a small saucepan to heat up on medium heat. This way it will be ready when you assemble the bowl.
Chop the slices of bacon into bacon bits. If you are scrambling eggs, add about 3 eggs to a medium sized bowl and mix with ¼ tsp water. Now cook the eggs in 2 tbsp of oil. Note: if you have guests with different egg preferences, you will want to cook any scrambled eggs AFTER any fried eggs. This will make the pan less sticky; it all depends on how you like your eggs cooked.
Now it is time to assemble our bowl! Start by adding about 1 ½ cups of the papas (hash browns) to a medium serving bowl and top with bacon, ham or both! Next add the eggs, green chile sauce, cheese and serve! You can place the bowl under the broiler for about 15-30 seconds if you want to melt the cheese, but I feel like it melts on its own enough; whatever you prefer. Enjoy!

    @@RedorGreen You actually taught me alot about using chili powder...I love New Mexican chili powder...But one of my dishes are small red papas y 1 tblsp butter, 1 tblsp extra virgin olive oil I heat chili powder 1 tblsp witha shake of salt cooking on table top with cover i slice the paps in 3 parts on low to medium flame...My son loves them I call them poppers...But thanks to you really showing how to use chili powder...Muchas gracias I will upload a pic when i learn how to do that lol...gracias Jaime
