❤️ Grouper Miso Soup Recipe - Cooking with Fen & Lady First
💛 Ingredients (Serves 5):
- Grouper (龍膽石斑魚) 300g
- Clams (large) 10 pieces
- Fresh ginger 20g
- Green onions (thin) 5 stalks
- Silken tofu 1 box
- Water 1500cc
💛 Seasonings:
- Miso paste 2-3 tablespoons
- Salt (optional, add to taste at the end)
- Rice wine 2 tablespoons
💛 Main Tools:
- Stainless wok or pot.
❤️Instructions:
1. Clams and Stone Goby Fish:
- Pour 700ml of water into the pot, add clams, and simmer over medium-low heat until the clams open. Immediately remove them from the pot. Pour the clams and broth into a bowl, wash the clams in the broth, then take them out and place them in a dish. The sand will settle in the broth. Carefully pour the broth back into the pot, discarding the broth at the bottom that contains sand.
- Cut the skin of the grouper into small pieces, and thinly slice the fish. Set aside.
2. Add Fish Skin, Ginger, and Tofu:
- Add another 800ml of water to the pot. Place the fish skin into the broth, add finely julienned ginger and tofu chunks, and continue simmering over medium-low heat.
3. Add Miso Paste:
- In a bowl, mix 2~3 tablespoons of miso paste with 1 tablespoon of rice wine and some broth. Stir well, then add the mixture to the pot and continue cooking.
4. Add Grouper Slices:
- Add the fish slices to the boiling broth, simmering for about 1 minute over medium-low heat. Turn off the heat.
5. Add Green Onions and Clams:
- Finally, add finely chopped green onions and the cooked clams to the soup, stirring gently to combine.

    2023/12/30一姐芬妹好! 龍膽石斑魚Q彈加上蛤蠣鮮甜、(味噌軟胃用碗先把它融化)。加上薑絲、豆腐、魚皮QQ、味噌加上最後是蔥花。超級營養美味(石斑魚味噌湯)👏😋🤩😘謝謝分享!

    剛剛現做好喝,心得是因對魚不熟,老公不喜歡龍膽石斑因有一些味道,想說去菜市場看有沒有石斑取代,結果菜市場只有龍膽石斑魚,慶幸一姊是把味道最濃的皮切割切薄片,在用薑煮出味道和用味噌調味,最後加酒,不愛吃龍膽石斑的老公也說不錯喝

    養殖龍膽每天(星期一除外)半夜現撈,在漁港交易,大盤當場現殺活魚,所以清晨買的龍膽都是最新鮮的,我還看過已經切塊的龍膽,肉還會抖動。龍膽煮麵線罪好吃,煮味噌湯個人還是習慣台式味噌的味道。

    是的,但魚骨的風味大家不一定會接受,所以您可以針酌一下,並小心魚刺喔!
