Greek Style Roast Leg of Lamb (Perfect for your Easter Table!!)

Ingredients
1 leg of lamb, bone-in, about 7-8 pounds
10 or more garlic cloves, cut into slivers
2 onions, quartered
salt (about a half teaspoon per pound)
freshly ground black pepper
2 sprigs of fresh rosemary
1 cup of water
1/3 cup fresh lemon juice
1/4 cup olive oil
2 teaspoons dried crushed oregano,
Instructions
Preheat the oven to 350 °F, 180 °F.
Use a sharp knife to cut slits into the leg of lamb. Stick the garlic slivers into the slits.
Place the lamb in a large roasting pan.
Combine the lemon juice and olive oil together and pour it all over the lamb. Season the lamb on both sides with salt, pepper, and oregano.
Add the rosemarry sprigs and the onions to the pan. Pour the water into the pan.
Cover the lamb with a sheet of parchment paper and then tightly with aluminum foil.
Bake for 3-4 hours or until the meat is soft and almost falling off the bone.
Remove the foil and parchment and place the pan back into the oven and onto the middle rack. Turn the broiler element on and broil for 5-10 minutes or until the top is golden. Keep a close eye on it so that the lamb does not burn.
Serve with roasted lemony potatoes, tzatztki, and Mediterranean Rice pilaf. Enjoy and Kali Orexi!
Notes
Marinate the meat and insert the garlic cloves the day before serving. Keep it refrigerated and allow the meat to come to room temperature before roasting.

I got a clearance lamb leg section (for $16.50! )... boned it... stuffed it with sautéed spinach, breadcrumbs, garlic and feta (+ olive oil, lemon juice, oregano, etc)... rolled and tied it ...(more olive oil /garlic mix over top) and used your tip for using the quartered red onion, fresh rosemary and water to add even more flavor. It is in the oven now... and smells SO wonderful~ Thank you for the upload ~

Efharisto Dimitra, as always you make me so hungry with your fantastic dishes. This brings me right back to a small family restaurant, (I always choose small family restaurants before bigger ones if I can), on Santorini years ago where I for the first time in my life tasted lamb leg made like this. It was so good that I just had to ask for the recipe from the waiter but he was very busy so I thought he had forgotten about it or had no time or no interest telling a sun burned tourist how it was cooked. But, then 15 minutes later the owner himself came out and proudly had written down the recipe on a piece of paper to me and it was just like your recipe Dimitra. I have been so many times to Greece, or Hellas as we say in Norway, and I am really aching for the world to stop spinning in reverse so I can go there again. I have become a grecophile and it is just the best country to visit with the nicest people and the best food in the world.

Absolutely sensational. Just cooked this for Easter Sunday lunch. So juicy and tender. 2.5kg leg of lamb cooked for 4 hours with rutabaga, radishes, fennel, onions, carrots, heaps of garlic. The lemon flavour was strong and good but may reduce the amount of lemon next time. This really is a fantastic dish - Thank You. 😋
The thing I love about leg of lamb is that you can just throw it in the oven, turn it once and it comes out just delicious with virtually no effort! And yours look fantastic, by the way!

I've never been satisfied when others would, even restaurants did it rare as they never got it right. Sounds great, I've never used lemon juice with my roast lamb before, I have a large lemon tree right outside my kitchen window + it's dripping with gorgeous juicy lemons, so I'll definitely use your recipe. All I need is the lamb, garlic, rosemary, red cracked pepper, potatoes, carrots, beans... Umm, you guessed it, I need to hit the butcher's & green grocers 🙆😂 my fridge + pantry is quite low. At least I have chocolate easter eggs though

Us greeks love lemon with our lamb, Our main marinate for nearly all meats is lots of lemon, garlic, oregano, salt and Greek olive oil.
Bella Dimitra, I made a similar dish for the first time this Easter. Also learning from my grandparents-try placing everything into one roasting pan (potatoes on the bottom). You will be amazed with what transformation those ‘taters go through-becoming infused with all the delicious drippings. Pulling the meat, tenting aside and placing the ‘taters back in the oven at 450° for 20+- minutes, yields infused and roasted ‘taters as a magical side dish. With other roasts I have done in this manner, some comment the ‘taters are their favorite. Thank you for your contribution ❤

Good video. I like to use the rosemary stalks like toothpicks stabbing them through the garlic cloves and forcing the rosemary and garlic into the lamb. Best of both worlds!. Kali mera from Rio de Janeiro.

Hi Luv... This is the way my Mon used to dout...but, with a little difference...In the lamb she would cut into the leg or meat and put in pieces of garlic all over the lamb. And also stuff it with bacon in different areas...Wow...Wee... This tasted like heaven... Mom used call this mock-venison... ThankU...It brought back much fond memories. Hahaha....
