Cooking the lamb and rice in this luxurious way makes it wonderful for a feast!
Leg of lamb cooked in the most delicious way!

Ingredients and step by step instructions for making the recipe
You will need a Leg of lamb or lamb shoulder
Make cuts on the sides of the meat
In a small bowl prepare the marinade with the following ingredients
Salt to taste, and one tbsp of paprika, half a tsp of cumin, and half a tsp each of black pepper and turmeric
Two tbsps of lemon juice
Two tbsps of vinegar
One fourth of a cup of olive oil
Then, marinate the meat with it
Cut a big sheet of parchment paper and add the following ingredients
Onion (120 grams)
Garlic (120 grams)
Cinnamon stick
Bay leaves
Cardamom, cloves, and one tsp of coriander seeds
Place the meat on top and brush the meat with the rest of the marinade
Wrap the meat with the parchment paper and aluminum foil
Place the meat in a roasting pan
Add a little bit of water in the roasting pan
Place in a preheated oven
Roast at an oven temperature of 400°f, 200°c for 3 hours or more depending on the oven
How to prepare the rice
Pour a little bit of vegetable oil into a pot
Add the following ingredients:
Cinnamon sticks, cardamom, cloves
Bay leaves
One tsp of garlic
Two cups of washed and soaked basmati rice
Hot pepper
One tsp each of salt and vegetable bouillon
Three cups of water
Cook it over high heat until the amount of water decreases
Add soaked saffron
Then, cook it over low heat for 25 minutes

ستحتاج إلى فخذ الضأن أو كتف الضأن
اصنع قطعًا على جوانب اللحم
نحضر التتبيلة بالمكونات التالية في وعاء صغير
ملح حسب الرغبة وملعقة كبيرة بابريكا ونصف ملعقة صغيرة كمون ونصف ملعقة صغيرة فلفل أسود وكركم
ملعقتان كبيرتان من عصير الليمون
ملعقتان كبيرتان من الخل
ربع كوب زيت زيتون
ثم انقع اللحم به
قطع ورقة كبيرة من ورق الزبدة وإضافة المكونات التالية
بصل (120 جرام)
ثوم (20 جرام)
عود القرفة
أوراق الغار
هيل ، قرنفل ، وملعقة صغيرة من بذور الكزبرة
نضع اللحم وندهن اللحم بباقي التتبيلة
لف اللحم بورق الزبدة ورقائق الألمنيوم
ضع اللحم في مقلاة الشواء
أضف الماء في صينيه الشواء
ضعها في فرن مسخن
تحمص في فرن بدرجة حرارة 400 درجة فهرنهايت ، 200 درجة مئوية لمدة 3 ساعات أو أكثر حسب الفرن
طريقة تحضير الأرز
صب القليل من الزيت النباتي في وعاء
أضف المكونات التالية:
أعواد قرفة ، هيل ، قرنفل
أوراق الغار
ملعقة صغيرة ثوم
كوبان من أرز بسمتي مغسول ومنقوع
فلفل حار
ملعقة صغيرة كل من مرقة الملح والخضروات
ثلاثة أكواب من الماء
اطهيه على نار عالية حتى تقل كمية الماء
يضاف الزعفران المنقوع
ثم اطهيه على نار خفيفة لمدة 25 دقيقة

    I cooked this dish for my wife and grandson tonight, and it was a hit. Absolutely Awesome, one of the most delicious dishes I have ever cooked. The rice was so tasty and fluffy, and the lamb just melted off the bone. YUM, and thank you for sharing this recipe with us.

    Lamb if cooked well by people who know how to cook it is extremely good. Much better than beef. But people who don’t know how to cook lamb leave a strong gamy smell, which I hate. Same with fish.

    Made this at Christmas and it was the best meat I’ve ever in my life made. First time doing lamb leg, wont be my last. This cooking technique of the greaseproof paper, foil and water tray was genius and made it soo tender just like the video 🙌🏾 thank you!

    Fantastic video. The cooked lamb looks so tender, and the rice flavorful and delicious! Only when you marinate the lamb leg I would place it in a tray rather than a cutting board, so it can catch all the juices and marinate the under side as well. Great recipe. Thank you for sharing.

    This is leg, you’d probably have to cook shoulder at lower temp for longer. I do 150C for 5 hours.

    That’s the juiciest leg of lamb I think I’ve ever seen. The oven temperature at 200C seemed pretty high to me, but I’ll give it a try. I usually do lamb shanks at 150C for 5 hours, but leg is more tender so maybe I’ll give this a try. Looks delicious though.

    I agree - I tried 200 and it was cooked, but I prefer lamb at 155-160 for longer say 4-5 hours to get it pull apart. At 200 for 3 hours mine wasn't quite pull apart

    I always make a chutney of tomato,garlic,chili,coriander leaves ,lemon juice,salt and lil cumin powder for basmati rice recipes… and made for this too.. But this rice is not dry and the mutton itself is juicy 😋 so we’ll take a piece and just wrap them with some rice and it’s absolutely delicious.. Actually the chutney was all left .. Sometimes, in between we can add them for a tangy taste..just to enjoy different tastes.. Go for it and enjoy 😍😋 Yeah one thing I want to add is …instead of putting pieces along ..I grinded the onions and garlics to make a paste and added with the spread which was applied on the mutton… you are welcome 😊

    Great method, I baked/roasted the lamb for a little over 3 hours and the meat was falling off the bone! My family enjoyed it and I was happy with the technique (wrapping w parchment and tin foil). Thank you

    The best roast leg of lamb video on KZread! Tried it and it was so delicious. Ever since visiting Dubai, I’ve been obsessed with a dish called Mandi which was served frequently at my hotel. They had it with fish, chicken, lamb and even camel. But lamb was the best option and this certainly reminds me of my time in Dubai. ❤
