    For this food getting the right consistency is tricky even if you know how to do it. You need some water, but not like a soup. To get the right consistency, you must think that the water in the pot in the end is not enough, i.e. the water level is lower than the chickpeas but not too low. You need to fight your urge to add more water there.

    @@tormentedsoul7852 Well, you gotta account for the fact that in the end you add the lemons, oil and puree some of the chickpeas. If there's too much water, the consistency will come out watery no matter what you do. You can always thicken with some corn flour if it's too watery, but IMO this ruins the taste of the chickpeas kinda.

    I made this last week and it was so delicious! I added a lot of lemon and fresh dill at the end. My husband got mad when he saw me cooking this dish. He said he hates chickpeas and I should have made lentil soup. But when he tried the soup he couldn't believe it. He said it is amazing that I can make something so disgusting taste sooooooo good! He said it was like a nice cooked meal one would eat in a european pub. Thanks Akis! Happy cooking! Cheers!

    I lived in Rhodes, Cyprus and Thessaloniki in the 50s and 60s and had this dish made pretty much the same way with very little differences. It's amazing. I love chickpeas and anything with dill and lemon. I learned to make this dish from one of the employees at the embassy in Thessaloniki who taught me how to make other Greek dishes as well. Kaló fagitó. Thank you Akis for demonstrating how to make this amazing dish.

    Akis! I made this recipie already 30 times. Sprinkled with feta at the end. Used Italian olive oil. Used greek olive oil. With different types of onions. With and without blending... BUT! It always ends up incredibly tasty warmy winter dish... it's a magic :)

    It's amazing, this dish is very similar to a Spanish one known as "potaje". Traditionally cooked at eastern or Semana Santa (Holy week). I love you Hellenes!!! 🇪🇸🇬🇷❤️❤️❤️

    We in India also cook Chikpeas. It is called 'CHOLE'. It is served with flat Indian bread called' KULCHA'. It is most popular street food in New Delhi, perhaps as iconic as 'HOT DOG' in New York.

    I made this for my family today. Was absolutely delicious. I even added some swiss chard for some green. Highly recommended recipe for everyone. It is very tart and lemony, not for everyone but for me it was delicious.

    Lemons in Greece go well with foods. They compliment almost any kind of food. In western Europe the imported lemons have preservatives on the outside and the juice is horrible on meat and soups. 😩

    I started using more lemons and limes since I learned Pad Thai. The acidic taste adds little extra kick to every dish. It is great. Also good tee with slice of lime with skin is much better.

    This dish is SO delicious, simple and fresh! I recently became a vegan and I love one-pot-meals, so I'm constantly searching for stews with legumes, particularly chickpeas. (Also, I happen to love Greece and Greek food - I've been to Greece twice and definitely want to visit again). The only change I made was with vegetable stock in stead of chicken stock. σας ευχαριστώ!

    Chickpeas are v. good for you and healthy, i ❤ them whether soup or hummus dips. I found Akis channel searching for Zucchini fritters, and could not believe how much Greek food is such a big influence here in Australia. All these yummy foods Akis makes are in the cafe culture here, and popular because they are so healthy, quick to prepare and make, and popular with families too.

    Chickpeas are supremely nutritious and filling and adapt to many different types of flavouring from different cultures. Most animals, including birds, can have them too which makes them an ideal staple for emergency supplies for people and pets during these uncertain times. Pre-cooked cans and jars are best (in case water is in short supply or if fuel for cooking might be a problem). This recipe is definitely going on my list.

    I lived in Spain for four years. Even before then, as a kid, I was introduced to Mediterranean food and developed a real appreciation for chickpeas (garbanzos).     Tonight, I came home from work and I had red beans soaking for eight hours. I cooked them the way you cook the chickpeas and also adding a Cuban style recipe with a touch of herbs including Curry leaves. And pork bone. It’s absolutely delicious!.     Greeks and Lebanese and other Med people will use lots of creamy thickening stuff in other dishes but usually yoghurt or fresh cheeses or pureed olives, tahini, eggplant etc. This dish really doesn't need it though it's perfect as Aki has made it here.

    This channel just popped up today...never before! I will make this for dinner tonight. I think I may add a meat, cut small like chick peae, either chicken or pork. Just to be able to serve something even heartier to my 98 year old(s) aunt & uncle ! ( ALSO never heard the salt/legume tip before. I cook lentils a lot & yes skin always falls off. Now I will hold salt till the end.)

    Zest and juice of two lemons? I don't dare to put that much lemon, lol. I'm making it with zest of 1/2 lemon and juice of 1, we'll see how it turns out. EDIT: it turned out absolutely delicious, thank you for this very healthy and yummy recipe. It was plenty lemony for me with what I put in, although I had only a little over 400 grams of chickpeas to make it with.

    I just finished making and eating this. This was SO DELICIOUS OMG. I could have eaten so much but had to pace myself, haha. So easy and with the easiest ingredients. I had it with some orzo at the side to make it more filling for my weekend lunch as I was so hungry and it was so so delicious. But even without, it is so SO good! By itself it’s really amazing. Especially the dill and the slices of lemon...once you squeeze more as you’re eating only adds this amazing acidic thing to cut through and brings life to every bite. And it’s so creamy without the use of dairy?! And I love me some dairy! Haha. Can’t wait to make this again, and again, and again! Anyway, thanks for this wonderful recipe! Especially during my 4th or 5th week in lockdown, this meal cheered me up and it was so easy and fun making it ☺️

    I have been watching this video for weeks. I have been so curious as to what it would taste like. There are so few ingredients so I was not expecting much but it smelled so good while it was simmering. OMG!!! SO GOOD!!!! Thank you for this.

    This is a Greek dish, but we have this is in Turkey, too. Many do not want to admit, however, Turkey and Greece are so similar that it is really difficult to tell the difference sometimes

    @@bdsferno5083 I believe the devshirme system has impacts but it cannot be the only reason. Besides, no matter what happened back then, now both nations have striking physical and cultural similarities.

    Great recipe. Akis and other chefs who associate with him, (won’t name out of respect for Akis’s channel, but you know who they are.) are the best chefs. Something has happened to food over the past decade. Food has become garbage. Everything is over-cooked, seasoned the same and covered with some crappy sauce that makes it all taste the same. Akis and chefs like him take food back to what it should be. He lets the ingredients speak for themselves rather than covering them all with some overtly-potent bull-crap sauce. And i love the use of raw ingredients in some of his reciped. Why the hell do Americans need to grill and fry every single thing in their meal, cook it twice over and cover it in some mayonnaise-based sauce? It gross. People like Akis need to keep this real food alive! I am dark-skinned person who practices Levantine cuisine. Akis’ use of ingredients and his method of preparing and cooking the food is simply proper! Like Akis’ said, “This food is simply the best food!” I suggest Americans try it. Quit cooking everything three-times over and coating it with salt, mayonnaise and sauce. This is real food, where the natural flavor of ingredients and seasoning is brought to fruition. Akis is great chef!
