I'm BooneBake. 🤗
Today I made a chocolate mousse tart with a lovely design.
I made it into a nice check pattern.
Even the lid was made in a checkered pattern, making it twice as special.
This check pattern was made in a different way than before.

And I made the coffee mousse for the insert in a really easy way.
Gelatin is not included.
I think this would be a good recipe for those who hate gelatin.
I used a 15cm round mold.
Details are provided in the subtitles and video.
It would really be a waste to eat this chocolate tart, but...
It's really delicious too.
This is especially true because of the *** powder added to the tart dough.

I made decorative cookies with the leftover dough and the designs turned out to be even cuter.

● Cup measure standard
237ml = 1 cup
15ml = 1Tbsp
5ml=1tsp
1 egg (53 g without shell)
Heavy cream (38% milk fat)
(Chocolate is chopped, flour is before sifting)
● Tart dough
** Mold size [Diameter: 15cm (diameter)*5cm (height)]
[Basic dough]
110g unsalted butter (1/2 cup + 3tsp)
85g powdered sugar (1/2 cup + 3 Tbsp)
A pinch of salt
A pinch of cinnamon powder
1 egg (53 g)
3ml Vanilla extract
[Plain dough]
1/4 of the basic dough
60g cake flour (1/3 cup+1Tbsp+1tsp)
7 g almond powder (1 Tbsp)
[Light brown color dough]
118g cake flour (3/4 cup + 1Tbsp)
15 g almond powder (2 Tbsp)
2 g cocoa powder (1 tsp)
[Dark brown color dough]
52g cake flour (1/3 cup + 1tsp)
7 g almond powder (1 Tbsp)
6 g cocoa powder (3 tsp)
● Coffee Syrup
75ml espresso coffee (1/3 cup)
10g sugar (2tsp+1/2tsp)
30 g hot water (2 Tbsp)
● Dark chocolate mousse (no gelatin)
75 g dark chocolate (1/2 cup)
60g heavy cream (1/4 cup)
120g (1/2 cup) heavy cream (50% whipped)

Each time I try to replicate one of your recipes, they never come out the way yours do. But I forever keep trying. Thanks for posting.

Shes got a lot of experience for sure haha But a few things you can keep in mind: she plans everything a lot ahead (they often do dish composition sketches first) experiments and probably does a few batches to test things we only get to see the final summary of a lot of work. Secondly you really gotta trust your ingredients and devices for instance flour in korea might have a different ratio and consistency than usa australia europe etc (climate also plays a role when baking) if your oven is baking unevenly you need to figure out the best placement for a good outcome. She might have a studiokitchen where everything is optimized. If your dish doesnt come out perfect like that dont feel bad you still improve with every one 😂

I think practicing one recipe over and over again can help!! That's what I did to learn all of the arts that I learned~~ it's a lot more helpful than confusing myself with many new recipes and new ways that get messed up every time!! 😊😁 In the end I realize that everything looks or feels really complicated at first but is a lot easier once you have fun with it and know it well!

Who wouldn’t want to receive a chocolate tart like this on their valentines day. I love you use the shop bought coffee soaked biscuits to put amongst the chocolate mousse cream. A lack of the better word- perfect 👍 ❤😊
