Gino D'Acampo : Tiramisu

Тәжірибелік нұсқаулар және стиль

Who does not love Tiramisu!? It is a classic for a reason. I make mine with Amaretto liqueur. Trust me, it's the best way.

The best tiramisu recipe I've had. The moment when I finished mixing the egg yolks, sugar, mascarpone, whipped cream and amaretto, I tried a little bit with a spoon. Then I thought, "why bother with the rest of the steps, I can eat the whole bowl of this egg yolk and mascarpone mix all by myself!" But I didn't lose my self-control and manage to complete the whole process. It tasted wonderful and also in my opinion, amaretto works the best.

Ingredients 3 espresso cups of strong black coffee, preferably espresso, cooled. 3 tbsp caster sugar. 6 tbsp Amaretto liqueur. 2 eggs, separated. 250g/8¾oz mascarpone cheese. 250ml/8¾ fl oz whipped cream. cocoa powder, to dust. 1 packet of Savoiardi (sponge lady finger biscuits)

In Italy, traditional Tiramisu is mostly served in a glass cup or any glass receptacle. In other parts of the world, Tiramisu is served in the form of a "slice of cake", and many Asians think of Tiramisu as some sort of "Italian Cake" (!!). The quality of coffee used is critical. IMO, it shd be a strong, full bodied coffee, and the Amaretto's slight almond scent helps accentuate the coffee's aroma. A light shaving of of high-end Gomimo chocolate also gives a rounder, smoother taste.

For everyone who wants ingredients Serves: 8 Ingredients 350ml cold strong black coffee, preferably espresso 150ml Amaretto liquor 5 eggs, separated 300ml double cream 6 tablespoons caster sugar 500g Mascarpone cheese 36 Savoiardi biscuits Cocoa powder for dusting *If you prefer substitute the coffee and Amaretto with cooled drinking chocolate. Method Pour the coffee into a medium size bowl and stir in 4 tablespoons of Amaretto liquor. Set aside. Have a 20 x 30cm ceramic dish ready and make sure that it’s at least 7cm tall. Set aside. Place the egg whites into a large clean bowl and beat until firm peaks form, set aside. Pour the double cream into a medium size bowl and whip until soft peaks form, set aside. Place the egg yolk and sugar into a large clean bowl and beat for about 5 minutes until thick and pale. Add in the Mascarpone cheese and beat thoroughly. Gently fold in the whipped cream with the remaining Amaretto liquor. Fold the egg whites into the Mascarpone mixture, gently so you will not lose the air bubbles and volume. Set aside. Dip each biscuit into the coffee for just 2 seconds and cover the bottom of the ceramic dish with 18 Savoiardi. (Do not dip the biscuits for longer otherwise they will go soggy and make sure that the sugar coated side of the Savoiardi biscuits are always on top). Spread half of the Mascarpone mixture over the biscuits and then cover with another layer of remaining Savoiardi biscuits dipped into the coffee. Spread the remaining cream on top and make it smooth by using a pallet knife. Cover with cling film and refrigerate for 3 hours. Just before serving (and not before otherwise the cocoa powder will go bitter), remove the cling film and dust with cocoa powder.
