Gingerbread CAKE

Christmas time is almost upon us with its festivities. Shops have started to stock on Christmas light and decorations and I have started to think of my Christmas baking already. This Gingerbread Layered Cake is a dessert I have been thinking of for a while now and it's now finally time to actually make it and share it with all of you. It's special to me because gingerbread is a tradition we keep year after year in our household. And if we only had gingerbread houses the years before, now we can also indulge on this gingerbread cake, packed with all the spices we love during this special time of the year: cinnamon, cardamom, star anise and orange.
It's far from being a complex cake, but it's delicious with its fluffy gingerbread sponge and dense, but melt-in-your-mouth orange cream cheese buttercream. The sponge is based on an egg foam, therefore it's incredibly fluffy and airy, complementing perfectly the smooth and tangy buttercream.
I decided to keep the decor simple as I usually do (less is more in pastry!) and went for a few gingerbread men and tiny trees, which made the cake very festive and playful.

    Arata foarte delicios! Insa am cateva intrebari: 1.Blaturile nu trebuie insiropate cu nimic?(nu as vrea sa fie fade); 2.Ce tip de branza folositi, care sa se amestece bine cu untul si sa nu existe riscul ca, crema rezultata sa se taie? 3.Daca in loc de portocalele confiate, pun un strat subtire de dulceata de portocale, ar fi prea dulce tortul? Astept cu nerabdare raspunsurile dvs. In final vreau sa va spun ca sunteti incredibila, la fel ca si retetele dvs si sper sa am sansa sa particip la unul dintre cursurile dvs. cat de curand. 🙂

    Multumesc mult 😊 1. Blaturile pot fi insiropate. Nu trebuie, dar suporta insiropare. 2. Crema de branza tip Philadelphia. Nu am un brand preferat. 3. Cred ca merge. Posibil sa fie mai dulce, dar nu cu mult mai mult daca aveti grija sa fie un strat subtire.

    Arata delicios si vreau sa incerc pentru petrecerea de Craciun! Am doar 2 forme de 18 cm, as putea sa fac 2 blaturi pe care sa le tai in jumate? Multumesc!
