Gai Don Go Recipe: How to Make Chinese Sponge Fruit Cake | Step-by-Step Tutorial

Gai Don Go is a baked sponge cake similar to the the birthday cakes sold by Chinese bakeries. This recipe makes a two-layer 6-inch round cake. Recipe adapted from Konichiwa Kupcakes and Tasty Tidbits.
For Cake
1/2 cup cake flour
1/2 tsp baking powder
3 eggs, separated
1/4 tsp cream of tartar
1/8 tsp salt
1/2 tsp vanilla
6 Tbsp sugar, divided
1/4 cup water
2 1/2 Tbsp oil
1. Preheat oven to 340 degrees F
2. In a small bowl, whisk together the cake flour and baking powder and set aside.
3. In a large bowl, whisk together the egg yolks, salt, vanilla, and 3 Tbsp of the sugar (reserve the rest of the sugar for later). Whisk the mixture for several minutes, until it turns pale yellow and thick. Whisk in the water until combined. Whisk in the oil until combined. Whisk in the flour mixture until just combined, being careful not to overmix.
4. In a separate large bowl, combine the egg whites, cream of tartar, and remaining 3 Tbsp sugar. Beat with an electric mixer until stiff peaks form.
5.Fold one-third of the beaten egg white mixture into the batter and mix gently until blended. Then pour the lightened batter into the remaining egg white mixture and fold gently to combine.
6. Pour into one tall 6-inch ungreased round cake pan, or two standard-height 6-inch round cake pans. Do not use nonstick cake pans. Make sure not to fill the pan(s) to more than 3/4 of their capacity because the cake will rise significantly while baking.
7. Bake until set and golden brown, 35-40 minutes.
8. Invert the cake pan(s) onto a cooling rack and let the cake cool completely, upside-down. When cool, run the blade of a knife around the inside of the pan(s) to loosen, and shake gently until the cake falls out. If using one tall cake pan, slice the cake horizontally to make two layers.
For Stabilized Whipped Cream and Decoration
1 cup heavy whipping cream
2 Tbsp powdered sugar
1 tsp agar agar powder
Fruit of your choice, such as fresh berries, sliced kiwi, and canned mandarin oranges (thoroughly drained)
1. In a large bowl, beat the cream with an electric mixer until soft peaks form.
2. Add the powdered sugar and agar agar powder, and beat until stiff peaks form.
3. Spread whipped cream over cake layers and decorate with fresh fruit.

    Sorry to hear that! Two potential reasons for that might be the baking powder not being fresh or over-mixing when adding the whipped egg whites to the yolk mixture. Hope you give it another shot and thanks for following along!
