Thank you to the entire Maison Travers team for being so welcoming and letting me film. I have the utmost respect and admiration for what bakers and pastry chefs do. Beyond the fact that they start work in the middle of the night and that it's physically demanding, what you don't see in the video is how hot the kitchen gets because of the ovens. You also don't see how good it smells all day long.

    I never realised just how much work and effort went into the creation of the not so humble croissant. The bakers and other staff at Maison Travers show just how much they love their work, and I'm a great believer that when one does their work with passion and love, it shows in the finished product.     observations: Having been to bakeries all over France, I've long been impressed with the consistently high quality. And we see that the reason is years of organized formal schooling in the skills of baking. A really good example of career education. Also impressive is the obvious pride of these young men in their work and their ability to speak speak about and explain their work in a well-organized and thoughtful way. The result of a quality education and a real respect for all professions.

    UK should classify british old knowledge and craft as art . you have plenty of great things going on that you're going to loose if you put no effort in teaching and preserving them. All the good things you can find in France are still here because we worked to keep them alive, or else we'd just have american chains and low quality. Good and beautiful things deserve to be loved and nurtured :)

    Love these videos! I worked as a cashier in a patisserie for 4 years and the bakers never wore gloves for obvious reasons - they need to feel the dough to make it work! There were never any hygiene problems either. I love that you captured the croissant making process as it’s a huge labour of love. Baking is actually a really physical demanding job, as bakers need to wake up before dawn, lift heavy pounds of ingredients etc while still paying attention to detail which is something I’ve never appreciated or even knew of before working alongside them. The bakers make it look so easy because it’s obvious how much they enjoy their job.

    @@Elurin Obviously (and sadly) it's not the case for everyone in France but it's deffinitly the norm for Artisans, it has a lot to do with the fact quality is valued way higher than quantity here in France !

    I was a baker and pastry chef..no one wears gloves, you have to feel the product, washing hands is essential as he said. Lovely to see the dedication and committment by these bakers, they take pride in their work and being a baker

    I didn’t see the complaints before about the gloves, but I’m guessing many people don’t know that you also aren’t required to wear gloves in the United States when preparing food as long as the food you are touching goes through an additional cooking step after you touch it. Only if it’s ready to eat food are gloves actually required. So if you’ve eaten cooked food anywhere, chances are someone else touched it. And you aren’t dead yet so I’d say it’s fine. 😅

    Even in the top restaurants products are artistically put by hand without gloves. The Backer, Chef is here to please you not make you sick. You have to trust him, if you don't he will tell you I you are not happy go elsewhere. Plus a few French words I don't want you to translate 🤕

    Gloves are for streamlined assembly lines, where there isn’t much care for the final product. If someone didn’t wash their hands properly, they won’t care. But artisans to care about the product they make, and will keep their hands clean for the quality of their product.

    That was amazing. I went to culinary school for Baking & Pastry and I loved making croissants, but they were so labor intensive, that I only made them once at home. Watching this video, there's such a difference. We were taught how to be very careful to make sure the lines were straight... in the video, he cut off a chunk and stuck it in the middle! Talk about a time-saver! I always learn something from your videos. My husband is in France this week. Everyday he sends me a picture of the amazing croissant he is eating...

    There's an essential difference between baking at school and baking in a bakery, which is profitability. Man power is very expensive in France, so head bakers want their workers to not lose time on details. Also, the quantities are significant enough to that does not have repercussions on the final product.

    Another fantastic video. I love croissants. I could eat them every single day. I really love getting to see behind the scenes in how they are made. I am also highly impressed by the pride that Jonathan has as a baker. In the US, I feel that many bakery workers would see it as just a job, and not necessarily something they are passionate about and proud of. You can tell he loves it. It's very nice to see.

    The majority of pastries here in the US are like white bread unlike the rich flavors in Europe and they cost 3x more here. I’ve found a few European quality bakers within a 100 miles from my home.

    That's mostly because demographics can't support the customer cost to pay for croissants. They are relatively easy to make in a commercial setting but very time and space consuming at home. If you do venture to make them use whole butter for your first batch. After you know how to make them use European butter. It's more expensive but had a higher percentage of butter fat. Watch your arteries though, it's a lovely addiction.

    Thanks Diane - a superb and succinct summary of a process at the very heart of French culture. It is hard to describe to someone who has never travelled to France and sampled what traditional French boulangeries and patisseries produce. I’ll never forget buying apricot and pear tarts, a custard slice and pain au chocolat from à boulangerie in a small village near the Normandy beaches - it had been in the same family for 200 years! I can still taste the incredible flavours and textures years later!

    For me, a video of behind-the-scenes in a restaurant wouldn't necessarily be all that interesting. But if you shoot one I will watch it. I'm sure plenty of your viewers would like it. My favorite videos of yours have been of the bakery and shopping at the store and the farmers market.

    I’ve been loving your bakery videos so much. My mom is a high school French teacher and is going to use some of your videos in her lessons! And I’m watching because I’m trying to become more comfortable listening to everyday French. I have family in France and plan on spending more time there in the near future.     Beautiful, beautiful croissants!!! I used to visit Montreal in Canada as a child and that was the last time I remember having a real, flaky, tender croissant like the ones you're making here. I also made homemade croissants once but never want to again since it was such a long, tiring process and I did it without a machine-all by hand!! In the United States, "croissant" is usually a piece of bread shaped like a croissant and not a real croissant. These are the real deal in your video!!

    I love crossaints and I can appreciate how the French bakes the bread to a nice caramel color. That dark beautiful color assures me the bread is cooked through and through and the crispness is at its best...This is a wonderful video....Thank you...I enjoyed watching this video so much... 🌷

    Thanks dear lady,,,,, this was such joy to watch good artisans. Same goes for that Asian French guy in your first presentation. They work, not lazy, confident, well appreciated....what can be better. They make society better.....every day. It is a joy to see motivated people that do a job they like. Does not matter if they clean sewers, build houses, are nurses in a hospice. are your car mechanic or a real scientist. A serious part of the population on Earth are good people.

    Anna - Love love your show and how's this for an idea. When I go to France I love the small regional markets that pop up in villages and towns sometimes 2 or 3 times a week. Would love to see how the Chicken rotisserie guy prepares for his day, how the cheese guy makes or buys his cheese, where the vegetables come from. So especially looking at stall-holders who make their own product. wether it be jams, charcuterie, cheese, hams, chickens and all kinds of other food. Small markets like these have all but disappeared from other European countries and is a sign of how dedicated the French home cook is at demanding and getting good quality produce. I once asked a French guy, running a wild mushroom stall, why French markets had such high quality of produce. He said "You don't want to mess with a French housewife","if you sell merde, you'll never have another customer again."

    I had a French friend who made croissants in the past. She said it was a lot of work due to the layering of pastry dough & butter. She never made them when I knew her. In this video, he folded over of the dough which was so simple! That is how he got all those yummy layers. Genius!

    It's easier when you have a machine making the initial dough and then doing the rolling. Also with the rolling machine you don't have to put it in the fridge after each turn (fold) while here they could do a couple of folds before it went back into the fridge.

    Thanks for another great video. A lot people don’t realize wearing gloves 🧤 in a kitchen can cause more problems . Because people are not washing their gloves or not always changing their gloves.and changing jobs and still wearing the same gloves! So frequent hand washing is the best !

    Hint: not everybody cook :p. But even when we don't cook, normally, we would look for quality products with no additives, even when it comes to industrial sandwiches. And the rare times i cook... well cooking a "flammekueche" is nothing big really. Even me can do it. You can look on the net if you don't know what it is. On the other hand, when i was young and cooked with my mother... i remember that "Boeuf Bourguignon", "Blanquette de Veau", "Osso Bucco" (Italian), "Lasagna" (Italian) and "Poulet à l'Indienne" took 2 days to make properly. When it came to Lasagna, she made the sauce, i made the "pasta" from scratch. Actually, most of our "pasta" was home made. But this is nothing compared to what my grand mother does... Even me would kill for her "Foie gras poêlé au Sauternes". All with products from the family farm. Even most french will never know about this, so i don't expect foreigners to ever have a chance :D

    Hi, This video is incredible. Watching behind the scenes in any bakery is interesting but to see a bakery in France, now that is really special. The owner of the bakery was very generous in allowing you to do this video... so a huge Thank you to him. I would like to see a series on topics. IE: series on food, bakeries, restaurants. Then maybe a series on how the French stay thin and their diets eating such delicious food. Then a topic on Homes, decor, living spaces, country vs city living etc etc. I love learning about other cultures. I also enjoyed the breakdown of the French language as you clarified about the pastries. Thanks again for another great video.

    I’m so happy I found ur channel!!! I love to make pastries and am mostly self taught other than the baking classes I finished before my accident. I love to make Pate Choux!!! It’s my fave second is any puff pastries and have done a few croquembouche the first one was a lil tricky but was so fun my next pastry tries are gonna be croissants macaroons and lobster tails
