커스터드 크림을 듬뿍 채운 폭신폭신한 빵을 만들었어요~
촉촉한 커스터드 크림이 듬뿍 들어 있어 정말 맛있더라구요.
끝부분을 잘게 잘라 덮어 구웠더니 모양이 재미있네요.
만들 때는 모양이 조금 동그랗지 않아도 틀 모양대로 동그랗게 구워져서 예쁜 것 같아요.

- 틀 사이즈 Mold size : 7.5cm
- 약 6개 분량 about 6ea
[재료 Ingredients]
| 빵 반죽
220g 강력분
15g 설탕
3g 소금
4g 드라이 이스트
120g 우유
40g 달걀
25g 무염버터
| 커스터드 크림
2개 달걀노른자
30g 설탕
4g 바닐라빈 페이스트
12g 옥수수전분
200g 따뜻한 우유
10g 무염버터
| Bread dough
220g Bread flour
15g Sugar
3g Salt
4g Dry yeast
120g Milk
40g Egg
25g Unsalted butter
| Custard cream
2 Egg yolks
30g Sugar
4g Vanilla bean paste
12g Corn starch
200g Warm milk
10g Unsalted butter
[만드는 과정]
빵 반죽(반죽기로 하면 편해요)
1. 밀가루가 들어 있는 볼에 설탕, 소금, 이스트를 넣고 섞어 주세요.
2. 따뜻한 우유(약 40도 정도)와 달걀을 넣고 손으로 약 7분 정도 반죽해 주세요.
3. 실온 상태의 버터를 넣고 손으로 약 7분 정도 반죽해 주세요.
4. 볼에 넣고 비닐 랩을 씌워 반죽이 2배 이상 부풀 때까지 발효시켜 주세요.
커스터드 만들기
5. 달걀노른자에 설탕과 바닐라빈 페이스트를 넣고 섞어 주세요.
6. 옥수수 전분을 넣고 골고루 섞어 주세요.
7. 유유를 조금 넣고 골고루 섞은 다음 나머지 우유를 넣고 섞어 주세요.
8. 약불에 올려 큰 기포가 보글보글 올라올 때까지 끓여 주세요.(계속 저어 주세요)
9. 불에서 내려 버터를 넣고 잘 섞은 다음 볼에 옮겨 담아 주세요.
10. 윗면에 공기가 들어가지 않도록 비닐 랩을 밀착시켜 부치고 냉장실에서 식혀 주세요.
11. 발효된 빵 반죽의 가스를 제거하고 6개로 나누어 주세요.
12. 동글리기 한 다음 비닐 랩을 덮어 15분 정도 중간 발효시켜 주세요.
13. 반죽의 가스를 빼로 동그랗게 만든 다음 밀대로 1/3 정도 밀고 잘게 잘라 주세요.
14. 돌돌 말아 동그랗게 하고 오븐 팬에 올려 주세요.
15. 7.5cm 틀을 씌우고 비닐 랩을 덮어 약 40분 정도 발효시켜 주세요.
16. 윗면에 우유를 바르고 170도 오븐에서 20분 정도 구워 주세요.
17. 윗면에 녹인 버터를 바르고 틀에서 꺼냅니다.
18. 식힌 커스터드 크림을 휘핑해 부드럽게 풀어 짤 주머니에 담아 주세요.
19. 빵의 옆쪽에 젓가락으로 구멍을 내 크림이 들어갈 공간을 만들고 크림을 짜주세요.
