SALMON BURGER RECIPE
INGREDIENT LIST
BURGERS
1 lb salmon
2 tb chopped green onion
1 tb capers
¼ tsp garlic powder
¼ tsp cayenne pepper
½ tsp salt
¾ cup Panko breadcrumbs
2 tb Dijon mustard
2 tb mayonnaise
1 large egg, whipped
1 tb olive oil
1 large tomato
1 red onion
Arugula
Burger buns
TARTAR SAUCE
½ cup mayonnaise
2 tb chopped dill pickle
1 tb lemon juice
1 tb capers
¼ tsp hot sauce
Dash of salt/pepper
INSTRUCTIONS
1. Cube your salmon into ½-1 in pieces. Add to a food processor with your green onions, capers, garlic powder, cayenne pepper and salt. Pulse food processor until ingredients are mixed and roughly ground.
2. Transfer chopped mixture to a bowl and add Panko, mayonnaise, mustard and your whipped egg.
3. Divide mixture into 4 equal portions and press down into patties. They should be about 1 in thick. Place patties in the fridge to chill.
4. To make your homemade tarter sauce, add to a bowl the mayonnaise, dill pickle, lemon juice, capers, hot sauce, salt and pepper and mix all ingredients. Prep other burger toppings.
5. Heat grill to medium heat for 5-10 minutes. Place burgers on grill on an aluminum sheet greased with olive oil. Cook for 5-10 minutes on each side or until golden brown and cooked through. Add buns to the grill in the last 1 minute of cook time to toast. Remove from heat, add toppings, and enjoy!

Loved the video I love salmon and steelhead burgers myself, I do brine the fish in salt, sugar and soy brine. Regarding the fishy taste , it’s the processing of the fish and the blood that causes it. Try ikejime method and there will be no dark meat/blood in the fish ! As an angler if I keep any fish I make sure to process it in the best way possible!

Good video, thanks for posting. Two comments....Some people might be interested in going to some of the spots you showcase, it would be nice if you say where you are. Second, why don't great lakes people understand that the "clicker" is a strike indicator, and you turn it off when reeling in your fish or checking lines etc. Saltwater fishermen all understand this.

We adjust the drag for a couple reasons. How fast/hard the fish is running and if the drag is sticking. We have invested in quality reels, but unfortunately no matter what you buy you can still have issues with the drag sticking. Especially when you use your gear as much as we do. The more you check and adjust your drag, the less fish you lose.

Definitely not for show, just how I like to fight fish. I usually can land about all of them so not going to change. When you charter every day your gear and lines take a lot of abuse. Drags stick and lines get wrapped/tightened together in the spool and I’ve seen many fish pull the hooks or snap off from that. Thanks for your concern.

You guy's are gonna blow up on KZread soon. I am totally hooked on your videos now. You are an amazing fisherman bro you definitely know your stuff. I know you guide kings and steelhead on the Pere Marquette if I'm not mistaken but do you also guide there on the big lakes? If so I would LOVE to hire you guys sometime for some kings out there. Please let me know.
