    Looks beautiful! I’m experimenting with firmness in cheese “batter” and then it’s very interesting how th results have been! I’m so glad your channel exists, it’s given me confidence to go full out on my cheese and fermenty desires! It’s been so fun so far, I’m just mesmerised with the process and how they change each day, it’s like watching a baby! (All the cheeses I used miso with now taste like mushroom! Just awesome!)

    I am so going to try this . In the video you didn't say or give an estimation at to when or how long to turn your cheese.(a week? a month?) I know temps very but can you estimate as to when your own cheese is "done" and your temperatures where you live so we can better guestimate as to when Ours would or might be ready like for colder or warmer climates?

    I'm sure I did. U would do it daily if possible I would keep it in my gold garage up to 2 to 3 weeks. Or when it's nice snd firm then I wrap and iT goes in the fridge. It will still continue yo age there.

    Hello Connie, always enjoy your videos. The cheese looks so delicious, I love how you just go with the flow and know what you like and make it work!! You're an amazing woman. I can't find the lupini flour here in NY. I think online but super expensive. Can I get dried lupini beans and make flour from them? Same thing, right? I've done that with the chickpeas, so much less expensive and grind them as I need. Keep up the good work. Love, Angel

    Totally making a version of this... and I use Lactic acid in my cheeses.. not sure you've considered it. But it is Vegan and adds that cheese Tang that cheese makers use also... or some do... but I wonder... do you think those jumbo sized moisture absorbers put in the box would be a good idea.. if it would speed up the removal of more moisture... I think I may Tru that anyway... im sort of a silent viewer for prob 7 years now and have made MANY of your recipes. I STILLL make your oatmeal cookies.. but I add dried cherries 🍒 😵😋👌.. devineness connie... Thanks for sharing ideas.. I should have tried this one long ago. 😊

    I am considering making this recipe. I was wondering if you have ever made nigari, which is a fermented sesame seeds vegan product. I will be using nigari from my freezer as one of the strong flavours when I try making it.

    Hi! I added some pepper on top and at the bottom, but not as much as you. After 6 days in the cellar (I've flipped them and have changed the paper once a day) I'm starting to see greyish mold building on top. Is it a bad sign or is it normal? I'm sprinkled some salt on the cheeses today. I hope to stop that mold but maybe it's a good one...?
