    I'm from Croatia, Dalmatia, a Mediterranean country that probably has the best sea bass in the world and one of the cleanest seas, by the way I've been a waiter for about 20 years, a fish restaurant and this is a totally wrong filleting of the fish, first of all I don't know why he removes the skin, it gives the fish a special taste, especially if the fish is roasted over a live fire, or on the griddle, and as a second, half of the fish is thrown away, first you separate the upper fin, then the lower one, gently cut it in the middle with a spoon, break off the head and tail, open the fish where you cut it, you take out the main bone, clean the bones from the part under the head, i.e. in the area where the bowel was, because that's where the bones, i.e. the needles separate from the main bone by themselves, return the dissolved fish and serve, 30 seconds of work for an experienced waiter

    This is a Palm Beach Florida my friend, we wait on presidents, Kings, politicians and quite literally the most influential people in the world… Billionaires and beyond.     @@karaconiglio986 Believe me that these politicians, businessmen and millionaires don't know the difference between a sea bass and a mackerel, they just take the most expensive ones to look good because they probably suffer from some complex of higher value, the Croatian culture is not too different from the American one, and on the other hand, believe me "important" people also come to Croatia, just google cities such as Dubrovnik, Zadar, Rovinj, here the city of Split has been called the best tourist destination for the summer of 2023 in Europe, and even a reputable American portal wrote that

    @@karaconiglio986 And since we mention filleting fish, Croatia is a Mediterranean country, just like Italy, Spain, and Greece are the more famous ones, and we all fillet sea bass like I mentioned, not this nonsense of filleting in the video, and we are also a well-known fishing country in the Mediterranean , the Adriatic sea is the cleanest in the Mediterranean, so that sea bass, since the title of the video says that is the "Mediterranean sea bass" was probably imported from the Croatian sea

    @@domagojbilic9746 but also, you have to remember these people are well traveled, and they conform to the cultural norms of the city they’re touring. In my 29 years of experience in south Florida, in fine dining, as well as the hospitality industry as a whole I have never had anybody complain about the way we file Dover sole are sea bass.

    Way too much waste, sir. You can easily debone lower belly and get a nice fillet out of that. You also forgot to take out cheeks. Also under 3 mins.

    Kyppy84 oh very interesting, I had my entry level sommelier but this particular restaurant I became an hourly paid high end breakfast server. I never thought my 27 years in this business and wine knowledge would take me in that direction. It was an offer I could not refuse and weekend a off. Well I wish for you a steady restaurant and if you ever feel like living in Florida I am sure SA would love a server like you.

    Oh dear, what did I just witness here? That's exactly why I never allow my fish to be taken apart. I don't care how "fancy" the place is or how I look if I do it myself. I just politely say thank you for the offer but I prefer to do it myself.

    What a waste. Pay $26 you get only $15. The rest goes down the drain. Yes i know bones...Then sell it as a fillet. If you order the whole fish you better know how to eat it otherwise dont order.

    i guess by cooking whole fish you will get more aroma dan flavour rather than just cooking a fish fillet. but since western cuisine usually seasoning a fish with little spices and herb, fish head and belly will taste not so great, also it's hard to eat fiah head and belly with fork and knive. as a comparison we indonesian cook fish with lot of spices and herbs and we eat fish with bare hand we consider fish head and belly as delicacy so yeah different culture and recipe. but again thank you for showing this on how to ear branzino and i will remember this method when i eat branzino at fine dining restaurant. great video.

    A lot of waste... But this is standard. I actually never been to a restaurant where they do table side deboning... Seems like a big bother to me. Just cook the damn fish I will worry about the bones ! I want all them little bits lol the head, all of it. You didnt even scoop up the buttery bottom!

    Palm Beach Island….my friend. Where the 1% live and vacation. Have you ever heard of the DuPont’s… I filleted a fish in the same way for one them. And after I filleted the fish I ate the rest of what was left in the back by the dish area. Everyone commenting doesn’t understand that I’m dealing with the richest ppl in the world and that is how they eat their Dover and Bronzino.

I work on an island with the richest people in the world from actors to pro golfers to our president. Food is prepared differently & I will tell you they do not give two shits about waste. Please tell me your resume so I can maybe respect what you’re saying a little because right now you just sound like an angry idiot. Edit-BTW.
