Fermenting in a Keg...why?

In this video I describe why I choose to ferment in a keg. Why does it make sense for someone that is looking to upgrade their fermentors but isn't ready to break the bank for a Brew Bucket or Conical. That's where I was about 18 months ago and this video are some of the hacks I've come up with to make this type of fermentation vessel work for me. Hope it helps someone!!     One big advantage that nobody seems to mention is the ease of handling of kegs compared to buckets, let alone glass carboys. Moving 20kg buckets full of wort isn't very comfortable! Kegs are meant to be moved around, I put my fermentation keg on a small postal cart to move it from the garden shed to my cellar

    Thank you...I've watched Dr Hans doing pressure ferments...and, I have a Sanke 5 or 6 gallon keg I removed the valve from sitting unused. Your video, while different, has lit a fire under me, and I'm gonna get that going with tri-clamp. Kviek here I come!

    Lot's of great info. Going to ferment in a keg for my next brew and appreciate some of the additional/extra tips like purging a second keg of sanitizer using the co2 from the fermentation keg. 👍

    The Fremzilla All Rounder solved all my problems and checked all the boxes you talked about! Easy to clean, floating dip tube, pressure ferm, closed transfer, no )xy dry hopping (with a simple hack) Absolutely love them!

    If they made 7 gallon kegs i'd be all over it. I just hate not getting a full batch out of a keg when it's done. I also ordered an all rounder!

    @@TheGavranatar I’ve actually started to make my NEIPA in 6 gallon batches and split it into 2 kegs for fermentation so I end up with 5 after dry hopping. Works well so far. Sláinte

    @@woodshedbrewingco.481 that is a nice idea! you could easily do split batch comparisons by serving straight from the kegs that way too, different yeasts etc. Got me thinking now lol. more cleaning though. I do like the kegmenter from kegland as well, i'm sure there will be cheaper options down the road in the future. Thanks for the vid. Maith thú!

    actually for those who watching. There is a less messier way without need to push our starsan from receiving keg. Just fill the receiving keg with co2 enough to purge, then swap the spunding valve from ferment keg to receiving keg. as long as you push the fermentor with higher pressure it will flow like a charm.

    Glad the video was helpful. I’m still keg fermenting today and love it. I do miss seeing the fermentation through a clear vessel but overall the process works great for me. Just picked up a 6 gallon mega mouth Torpedo keg for fermentation. Sláinte

    Great info lad, I use a hop sock for dry hops suspended from a little hook I siliconed onto the inside of the cap, I use a beer bite filter system when racking from the pressure fermentor to the server, but I never tried your closed loop system ...now I will. saves a fortune on C02, .many thanks lad..a big Sláinte to you.

    Oh wow this video was really helpful actually. I'm hoping if I end up going floating diptube it'll be easier to get the tube back under the liquid in a keg. I shook the crap out of my fermzilla and had no luck. I really like your method of using natural CO2 from another fermentation to do purging and to transfer with. That could be a real cost saver for someone like me who buys their CO2 in smaller soda stream cannisters. Would for sure save me some trips to change those cannisters out. Cheers!

    Great set-up. I do a similar transfer, but don't use the "native" CO2. I use store-bought CO2. That can be in short supply at times. Your gravity equilibration system is certainly a great idea for SHTF circumstances...

    Fantastic information - very solidly practical stuff. A few questions, if I may? - do you get concerned about running a pond pump in hot water? Is that pump specially rated for hot environments? How hot is that water you're doing the keg wash with? (This is something I've been thinking about for a while now - I also want to be able to clean my kegerator taps with it.) Cheers!

    That is a great question. I’ve never thought about the heat. I use my tap water on it hot setting so it’s probably 135ish. It hasn’t caused an issues yet. Hope the info helps. Sláinte

    I had one of the original Zymatics. They used kegs to ferment. I loved doing it this way. Could easily close transfer from fermenter keg to serving keg.

    I’ve watched several videos to learn how to use a Corning Key to properly ferment and keg kombucha… and this is the most helpful video so far. Thank you SO MUCH. What are those plastic attachments called that you use on the end of the plastic tubing and just push into place to create an attachment to the kegs?

    This is almost the same as my process. I use 3 kegs, one for primary, one for secondary/dryhop, one for serving. The primary keg has a floating dip tube, The secondary has a normal dip tube that goes into a cylindrical hop basket, and the serving keg is also a floating dip tube with a strainer (morebeer sells them). I pressure ferment in primary for about a week at 23psi on the spunding. After a week I close transfer to the secondary that has already been purged and has a dry hop basket with my hop additions (this is a separate basket from the one with the dip tube). This also ferments at 23 psi, usually a few degrees above primary. After another week or when it stops producing pressure I cold crash the keg. Then close transfer to a purged serving keg and put it on CO2 at serving pressure in the keezer. I have reused the primary without washing it (reusing the yeast cake) but only for beers with no whirlpool additions. The secondary gets washed and purged after each use. I have reused the serving keg without washing a couple times and seen no issues. Granted I'm doing mostly IPAs, I wouldn't mix and match with a stout or something like that. Transfers do go slower but you don't have to watch over them, just hook them up and let gravity and pressure do all the work. Overall I think it saves me hours each batch, also way better than the days of bottling. Used kegs are relatively cheap, only my serving kegs are new make. If only I could come up with a way of doing the dry hop and not needing to crack the keg then I could really be lazy.

    I am wanting to ferment next beer in a corny. Can you tell me how you added your dry hop addition(s)? Did you do so after a few days and and pop lid and drop in hops? Did you transfer to a purged secondary keg with the hops in it?

    When you purge the liquid line it's easier to do what did @14:45 by keeping both ends attached and depressing the poppet inside the liquid out. This will fully ensure there is no air in that line and also stays purged.

    Awesome video! I'm completely onboard now. Quick question(s) though... since fermentation under pressure speeds up the entire process, what's the best way to figure out when to dry hop or slam in crystallized flavoring? Also curious if you've fermented and served from same keg, if so, results/thoughts? Thanks in advance!

    Great questions! I use a picnic tap to take samples once in a while and see where the fermentation is at. I try to dry hop with just a few points left to go to help scrub the O2 that gets in during dry hopping. As for use the keg as a serving vessel, I haven’t done it yet but plan to try. Thinking Of installing floating dip tubes on all of my kegs then they all can be fermenters or serving vessels. Think it would add flexibility to my process. Hope this helps. Sláinte!!

    Absolutely love this video and your style of presenting information! Closed transfers is the next thing for me because I'm only exploring NEIPAS for some time still. Do you think it's viable to have two Cornelius kegs to do a sort of dry-hop-leap-frog using closed transfer from one to another? Then clean the first one, prime it with hops, closed transfer to that, etc? Or would you be missing out on some of the yeast while dry hopping in the next keg? Looking forward to hearing from you.     Great question!!! There is a lot of speculation about what yeasts will biotransfer. From what I have read on the topic it has to be the right combination of yeast and hops. If the bio transfer is what you are after then I think the lack of yeast would effect it. This is really cool concept and if your try it I would love to hear how it goes and what the outcomes are. I was thinking maybe there's enough residual yeast in suspension if dry hopping before main fermentation step is done. First things first, I'll need some kegs! Thanks for your insight 😊

    I use a similar set up but once the receiving Keg has emptied of StarSan, I put the Spunding Valve on it and let it Pressurise. Saves a bit of Gas.

    True. I have tried it though. I’ve hooked up the gas to the serving keg at 2-3 lbs and then popped the top. Dropped the hops and quickly put the top on. My thought is if I have positive pressure in the keg while I dry hop I should be able to minimize any O2 ingress. I haven’t had any negative effects so far but for sure needs more testing.     I think you would ok using hop bags or a stainless steel screen to filter the hops. Yeast and trub my still be an issue with the regular dip tube though. Good question! Thanks for watching!! Sláinte

    There are 24,5l/6gal kegs available on alibaba. They would be perfect to ferment 20/5gal of beer. Also they are almost the same size as normal NC kegs.

    I scaled the recipe to 4.5 gallons. Also used ferm cap. I made the switch to Brewfather yesterday. I importing all my Beersmith as we speak. Thx!!

    Hey. I have been reading some for CO2 purging. And i get that, there is nothing more natural than CO2 (from any source given). Would you bottle that beer from the keg you released the CO2 or fill it up with CO2 again? I just do not understand why to get the CO2 from a keg with a beer in ? It might just is that i do not know some things :)) Thanks again gr8 video!

    Thanks for thr comment. I dont bottle anymore sorry. As for the CO2 purge...I am trying to cut O2 out of the process as much as possible. So by filling the serving keg up with Star San and then pushing it out with naturally created CO2 it is completely O2 free. Then fill it with beer without opening the keg it should be a completely closed transfer with no O2 introduced. Or at least thats thw goal 🙂 Sláinte!

    It's suprising how much c02 is generated during fermentation, sometimes I'll purge kegs that way.

    How do you use this process while doing several dry hop additions?

    Good question. If I am pressure fermenting I will first release the pressure then add 1 lb of CO2 to the keg so I can open the top but have created postive pressure inside the keg. Quickly I will open the top and drop the hops with the CO2 running to alleviate as much O2 exposure as possible. Not perfect but has seemed to work for me so far. Sláinte!

    It truly is super simple to do. Make sure to adjust your batch size to allow for head room. I target 4.5ish into the fermenter..Sláinte!

    If the drop hops are floating free, won't they get caught up in the floating dip tube as well?

    If you don’t mind a question on pushing the starsan out with fermentation pressure. I’m planning on buying a kegging setup and want to not waste CO2 from the tank but still want the benefits of keeping O2 out so this looks like a nice idea. The question: does this get all starsan out of the keg or does it leave a little bit at the bottom of the keg? And how do you get that out without bringing O2 in?

    I welcome questions... this process will leave a small amount of Star San in the bottom. No way to get that out without introducing O2. Brulosophy.com has some experiments on this and found that it does not effect the finished beer. Ive never noticed any ill effects on my beer. Hope this helps. Sláinte

    @@woodshedbrewingco.481 Thanks for the informative video. I see that you have a collecting bucket for the starsan, are you able to measure how much of the starsan come out of the keg prior to the beer being transfer? Is there a recommended PSI for pushing out all the starsan ? Thank you!

    @@joseagonzalez2 I haven’t tried to measure the Star San but probably could do it by weight. It does leave a small amount of Star San in the bottom. I haven’t seen any detrimental effects to my beer with it as of yet. Appreciate the feedback and questions. Hope this helps. Sláinte

    Actually the spunding valve goes on the gas post. Easy way to think about it since the beer is building CO2 during fermentation it’s a gas so that is the post you want to use. How that helps. Sláinte

    Actually I have played around with the idea of swapping all my dip tubes over to the clear beer system and use all my kegs as fermenters. Havent pulled the trigger and wonder about the affect of the yeast cake sitting at the bottom of the keg. Would apoptosis cause a defect in the beer??? Dont know. Thoughts?

    Now as Covid hit I noticed I cannot drink a keg of my beer myself I've been counter pressure bottling my beers directly from fermentation keg. So I'll ferment, cold crash, (carbonate if not pressure fermented) and bottle directly from one keg. Then share some of the bottles and store rest for future. Then I can jump on brewing the next beer!

    @@woodshedbrewingco.481 Yeast autolysis shouldn't be an issue if you chill when done fermenting, and drink within a month, or maybe more. I would let you know, but my beer never last that long...but it would be worth finding out. Maybe if you're hitting 1 or 2 months you could always bottle up the rest in a growler or 2.

    Great question....never talked about that in the video. For that particular beer it was at 66. My basement bar area is pretty consistent so it works well for your typical ale yeast. Doing a warm lager under pressure right now in the same kegs. Sláinte

    You dry hop during high krausen??how do you go about dry hopping in a keg since you are pressure fermenting?

    I have done both. High krausen and after ferm is completed. I just bleed the pressure and open the keg. I’ll then let a pound or two of CO2 run when I open the top to keep positive pressure in the keg so I can open it and drop the hops as quick as possible. This keeps the O2 ingress as low as possible. Then I’ll hit the keg with 10 LBs of pressure to bring it back to pressure fermentation PSI. Hope this helps!! Sláinte

    I've got the gear, and am just wondering if 4.5 gallons will blow out into my spunding valve...have you had any krausen push out at 4.5 gallons?? Edi: I got to the part were you said your using foam control....I've stopped using that liquid silicone because it's not a natural ingredient. Guess I'll shoot for 3.5 to 4 gallons.

    Been close a few times. I try to stay below 4.5 so the krausen doesn’t push into the sounding valve. Absolutely a concern to be aware of though

    What cleaning solution do you use to clean the keg? I also use a pond pump & bucket like you but it foams up after a couple of minutes.

    @@alidavemason4417 I get the foaming issue as well but I use about 2 gallons of water in a 5 gallon bucket and use the keg washer outside so it isn’t too big of a deal for me if it overflows a little. Interested to see if PBW will do the same thing. They are selling PBW in tablets now. Gonna give them a try

    Great question. I try to dry hop before fermentation is totally finished to have the yeast scrub the O2 out as much as possible. Secondly I will hook up the CO2 tank and push 2-3 lbs as I pop the top and drop the hops. If I keep postive pressure in the keg that will help elevate some of the O2 egress. It’s not completely O2 free but it’s the best I can do with this set up. Would love to see someone sell a retrofitted keg top with a butterfly valve that would allow for this but oh well.     Nice video, get yourself a corny lid floating kit from kegland. It has a ball lock post in the lid ! So no need to change your original dip tube.

    @@woodshedbrewingco.481 It's also worth adding a "Floating Dip Tube Filter(80 Mesh 304 Stainless) - For FermZilla or Kegmenter )" ideal if you're fermenting and dry hopping in the keg .👌

    Ok I don’t understand you are using a spunding valve. Then you take it off loose your pressure to push the star san out of the second tank. ?? Why would you not just star san the second keg. Then put the spunding valve on the second keg. ??

    Without the stars san in the second tank. The co2 is heavier than air so it would purge the air from the keg but you would maintain the pressure in your fermenter

    @@perrymattes4285 thanks for the comment. The issue there is gases will mix so you can’t be sure all the O2 has been purged. By filling the keg with Star San all O2 is purged and you can be confident that only CO2 is left in the keg. Sláinte

    @@woodshedbrewingco.481 ...but think about it. When you first start fermenting there is O2 that is pushed out. You would need to figure out how much co2 is produced (enough to move 5 gallons of 02 out of second keg)....but I like Perry's thought process on this....and he is right Co2 is heavier than O2.

    @@john-smith. the issue there is CO2 and O2 mix. They don’t stay separated. Same as our atmosphere. Both are present at the same time If your worried about the small amount of O2 that is pushed out of the fermenter at the beginning of fermentation the just leave a air lock on at the beginning so the O2 is purged then switch to the pushing the Star San out and you can be sure it’s pure CO2.     In my opinion, you mention ball lock and pin lock too often. It's distracting and for most of your viewers, saying it 1x would be enough.

    How many times are you going to tell us its ball lock and pin lock, this video wouldve been half the time if you just said it once, we get it.. some useless extra steps, but nonetheless, nice process/setup - it shows you've really thought this through
