I have a flat back behind the belt so it doesn’t make a convex unless I go behind the angle reference. Then it’s just a matter of the angle you hold and how far you progress with various grit belts. In that case I would say the more polished the better. It will help make clean cuts. 😊 next time I get a chisel I’ll make sure to make a video on it.

Why don’t you wear hand protection?

Hand protection such as gloves, is not recommended when using a sander. Which is what the sharpener is at its core.
