Anschließend das Wasser abgießen und den Reis mit allen anderen Zutaten in den Mixer geben. Das Ganze auf höchster Stufe für 2 Minuten mixen lassen. Eine Backform mit Backpapier auskleiden und diese bis zur Hälfte mit Teig befüllen. Den Teig bei max. 40 Grad im Ofen gehen lassen, bis er sich fast verdoppelt hat. Teig aus dem Ofen nehmen, Ofen auf 180 Grad vorheizen und das Brot anschließend für ca. 35-40 Minuten knusprig backen.

Something doesn’t look right. It doesn’t look like the same bread pan and the bread deflated quite a bit from the original dough with the added parchment paper.

I recommend paying attention to the temperature when blending. When it gets too hot, you kill the yeast. I guess. Maybe add a few ice cubes ?!

Not at all. It will be a dense chewy mess. The yeast makes bubbles to make it rise and be fluffy.

One important factor when making this particular recipe is to use a thermometer to ensure temperature doesn't go above 105°F; otherwise it kills the yeast and it won't rise.

you can try making it with baking soda or baking powder though the texture is gonna be different I'm gluten free myself. There are so many things that I miss eating

Yeast is not by nature contain gluten. Some manufacturers add gluten. This is probably just the brand your using. Fleischmanns is known to be gluten free.

There are gluten free yeast to buy. The problem is that some people suffering from coeliac don't tolerate yeast (sometimes only in the beginning of the gluten-free diet)

Yeast in itself doesn't contain gluten. Check the ingredients. If wheat source starch is added, it will contain gluten. If it's only yeast, there's no gluten.
