Family Makes Peanut Brittle on a Sunday

***WARNING***This video is made for educational purposes only, if you attempt to make this at home you do so at your own risk and we can not be held responsible for any injuries. Making peanut brittle is a dangerous process since such high temperature are used to make it. With that said, for those that are curious and want specifics this is how we make it.
We add 10 pounds of corn syrup in a copper kettle along with 14 pounds of sugar and 2 quarts of water. Bring it to a rapid boil before adding raw peanuts; already cooked peanuts would give it a burnt taste since they would then be cooked for a second time. Once the candy reaches 285°F we remove it from the stove and add an ounce and a half of salt and 8 ounces of baking soda. Then we pour it on the table and flatten it our and wait for it to cool down enough to cut it into thirds and flip it onto our metal counter where we'll stretch it thin. Then we box it up for sale!

    I used to work in an old school German Bakery. We made all of our cakes, pies, cookies, breads, danishes, and many other pastries from scratch all by hand. We also made Jewish Challah bread as well. We used steam kettles to make our various candies, glazes, etc. I love watching this because this is exactly what I did for years.

    My first full time job was at MarySue Candies in Baltimore MD, started there around Easter time, mostly worked peacon table and removing candies (creams) from the ersober. One day a gal and I got to playing around and the candy got away from us, it was like I love Lucy all over. We both got sent home for the day, Mr Spector was super mad because the floor lady had to shut down the line. 50 yrs later and that candy factory is one of my fav memorizes. Thank you.

    That Scale looks like a Fairbanks Platform model 11 & 1/2. You will see the model number on the front of the platform. If it has a wood inlay on the platform, you are looking at at least 1897 to 1886. And if it is all metal, 1900 to 1926. But that scale is one of the best scales ever made, they last forever and are easy to make accurate if they go out of balance.

    Thanks for sharing your recipe. I have a little (emphasis on little) nut business here in Australia (20 years- mostly Caramel Macadamias) and have been looking for a good peanut brittle recipe. Obviously, skill and technique are the most important factors, but at least I have a start. Love watching you work.

    +Mark Mc i know they smooth down the foam to create a thinner brittle, but if your at home DO NOT touch it once poured! That foam creates air pockets and is the key to make the most delicate "brittle" thats not hard even your grandma can eat it! The more you "thin" it out the harder it gets because you stop that air bubbles that create that delicate britle we all love. Also, add a little bit of vanilla extract when you add the baking soda, trust me! You can even add a tad bit of butter when you add the raw peanuts if you don't mind the extra fat. Only gives more flavor.The recipe i use is 2 cups sugar, 1 cup corn syrup, and 1/2 cup of warm water to be the best base to start off when at home. When the temp is about 250-270 add 2 cups of raw nuts (whatever you prefer can be cashew , pistachio, etc) and plus 2 tablespoons of unsalted butter. Add as much salt as you like for flavor (southerns even add some Cayenne pepper for a little kick!). Once at 310 remove from heat, add 2 teaspoons of baking soda plus 1 teaspoon vanilla extract and stir till mixed. Pour onto a cookie sheet thats buttered or sprayed and DONT TOUCH IT!

    Thanks so much for your advice. I am having trouble sourcing Corn Syrup here in Australia, though have mnaged to find some on EBay from an Australian supplier. Hope to do a test batch in a week or more. Again, thanks so much to everyone..

    I have seen reciepes that use just sugar and water, but ive found the added corn syrup makes it easier to get the consistency we want.

    I love watching you make brittle, it looks delicious!! And I think it's awesome seeing Craig help out like that with the stretching of it. I can't wait for January (or maybe December) to come. By then it will be cool enough for me (I live in Southern California) to feel safe enough to order some chocolate goodies!!

    theres something absolutely wholesome and endearing about this i cant stop watching, think i subbed a while ago but didnt fully realise or appreciate that this is family run and all, also the views are amazing your parents can surely retire sometime very soon if they wanted that lol i only say that because this seems like such hard work but im sure they love it!
