Max and Steve Might Have Burnt The Batch...

People always ask if we make mistakes, which makes sense because you rarely get to see them on camera. And you see Steve now that he has been making candy for decades, and you didn't get to see him when was first learning the trade. BUT we do still make mistakes from time to time, and every once in a while they're caught on camera, this is one of those times. Enjoy one of our mishaps!

Please pick second day air with a cold pack, if you don't we will have to call you and tell you that you need it. Although we love talking to our customers we just don't have the time to do that. So please help us help you get your order as quickly and painlessly as possible.
***WARNING***This video is made for educational purposes only, if you attempt to make this at home you do so at your own risk and we can not be held responsible for any injuries. Making hard candy is a dangerous process since such high temperature are used to make it. With that said, for those that are curious and want specifics this is how we make it.
For one full size batch we combine into a copper kettle 14 pounds of corn syrup, 7 pounds of sugar, 1 teaspoon of cream of tartar and 2 quarts of water. We heat it up to 310°F, then we remove it from the stove and pour it onto the marble table and cool it down. Here we add in color and flavoring oil before stretching it on the hook. We stretch it to add in air bubbles which turns it white. We combine the stripes into the body and put it through our fancy candy cutter, then we just wait for it to cool down and bag it up for you to buy!

    Max truly is a man of character fully owning up, what a great guy. Not even a mistake really, just a learning experience. Would’ve been cool to see Max stretch it on the hook as a practice run. Great content.

    Too bad but where people work mistakes are made. Since the start of this channel I never saw anything get burned or really go wrong so it had to happen sometime. I could tell Steve wasn't too happy and Max feeling guilty. Still love you guys. It can happen to anybody. It was sweet of Max to offer to make a new batch by himself.

    I think seeing Steve's disappointment is what made it feel worse to Max. When he was saying about it being his fault to Craig, he seemed almost upset, not just disappointed and you are right, Steve really didnt seem so happy and it showed, which will have made it worse on Max. Mistakes happen though.

    I could tell Steve was unhappy about the candy getting burned, but am very proud that he maintains his candy's quality by refusing to sell it. Max is still learning, accidents are bound to happen occasionally & 👍👍 to him for accepting the blame & offering to make it right. But then, as Craig said, couldn't anyone else have checked it?

    This was an emotional rollercoaster. I laughed out loud then cried on the inside. Terry, Quick Steve and Max always do their best and truly care. Plus 2 1/2 years between mishaps is amazing. Only the best for their customers!❤

    Sometimes candy makers can be in denial. I worked beside a candy shop in Banff Alberta where the candy maker offered me a candy apple one day and asked if it tasted burnt. I said yes. He insisted that it was ok. I asked him if it is ok why did you ask me to try it. He tossed the batch.

    yup and that's not just candy makers but most businesses. That being said you can see the mother was unsure and Steve had that eye like "oh no". Thankfully they are rigorous enough to know not to serve it

    Molasses has sulfur in it so it always tastes a little burnt, I bet it was hard to tell if it was actually burnt. I love molasses, I would have probably eaten it anyway. LOL 😝🍬🍫🍭

    I, weirdly, really like this video. It shows anyone can make a mistakes, no matter how long you been doing something, and that it's not the end of the world. Throwing away the whole batch is of course not fun, but that's life, it is never perfect. I'm a perfectionist and I have to keep reminding myself that that is simply not realistic, videos like this one or from other you tubers showing their mistakes make me feel better.     You could have sold it at a discount with a "Oops we messed up!!" label, and a quick blurb that says "We let this cook a little too long, it tastes good, but not quite perfect!" Then maybe you could at least get back your money for the materials used! I am sure some of the subscribers and general customers would happily buy discounted candy!

    Poor Max looked so upset about this, he does an amazing job, he is only human, we all make mistakes at times, he offered to stay behind on his own to make another batch and wanted to take full responsibility for the mistake when as Craig said anyone could have checked to see it was over cooked, (loved that Craig said that to try make him feel better) felt so bad for Max as he has come such a long way, very talented guy and I bet you would be lost without him.     Tough break on the burnt batch. I know you guys love using the tried and true equipment, but I have to wonder...in this modern age they must make digital thermometers that would alert you when a certain target temperature is reached. Maybe time for an upgrade.

    Isn't Burnt Toffee a very in flavour at the moment? Cool - crush it up and sell it as burnt toffee crumbs for ice cream toppings? Or crush it, mix with roasted walnuts and make burnt toffee bark?

    I know this situation as a chef. Sometimes it's a matter of seconds - only one moment of distraction and it's too late. But this video shows perfectly that you're working as a team "It was my mistake" and then "We all could've checked the temperature". It's always good to know that even you guys make mistakes sometimes.

    The energy is different too. I still love them and still watch them, but the energy is so different. Maybe because it was so small in the last place, that it felt homely and snug, here has lost that a lot. But I still love them.

    Why not use an "digital thermometer"? You can set the temp you want to hit and once there it will sound an alarm. I use one for making candy all the time. Works great and only cost less than $20.

    Maybe they need some kind of an electrical thermometer that will sound an alarm at a set temperature if one exists for candy making. I wonder if the growth of the company recently will affect things like this, cause staff to make changes they are not used to in order to keep up with demand and mistakes happening because of it? Sometimes growth can be a blessing and a curse. I love the hard candy you guys make. I recently ordered from another small candy maker and theirs was nowhere near as flavorful as Hercules hard candy is. You guys put out a quality product and I hope with growth that never changes.

    Thanks for the video!! Mistakes happen!! And I’m sure Max will be checking that thermometer obsessively for a while! :) As far as the other comments.. I don’t think Steve seems sad... he’s just reacting normally and trying to make decisions about how he wants to proceed. And maybe Max did pull it once it cooled... we don’t know! But that would be more time waiting for it to cool etc when there’s obviously other work to do!
