Creamy Tomato Soup
2 tbsp oil
1 small onion, finely diced
2 cloves garlic, minced
8-10 roma tomatoes, chopped
1 tbs brown sugar
1 tbsp tomato paste
1⁄2 cup parmesan grated OR a leftover parmesan rind
2-3 cups vegetable broth
1⁄4 cup cream (optional)
salt and pepper to taste
fresh basil for garnish
In a large saucepan, heat oil over medium-high heat.
Add onions and sauté until they become translucent.
Add garlic and sauté for another minute.
Add tomatoes and let them cook for about five minutes so they absorb all the flavor of the onions and garlic.
Add brown sugar, tomato paste, parmesan and vegetable broth and bring to a boil.
Reduce heat to low and simmer for about 30 minutes.
Add cream.
Puree soup with an immersion blender or in batches in a traditional blender.
If using a traditional blender, remember:
• Only fill your blender 1/3 full.
• Remove the centre insert in the lid of your blender to allow hot air to escape.
• Cover 3⁄4 of the hole with a kitchen towel to avoid splashes.
Store in the refrigerator for up to 4 days or in the freezer for up to 4 months.
Garnish with fresh basil.
Enjoy!

Add leeks and celery and sauté until they begin to soften.
Add garlic and sauté for another minute.
Add potatoes and vegetable broth and bring to a boil.
Reduce heat to low and simmer for about 30 minutes.
Add cream.
Puree soup with an immersion blender or in batches in a traditional blender.
If using a traditional blender, remember:

    alright I'm 14 and I literally just made the potatoes and leaks soup. my family was very impressed and I was very flattered. I made the homemade broth and let that summer for about an hour and then I put the stuff with the soup. also it's a really good complimentary to steak. I also left chunky but making sure to kind of mash up some potatoes and it was absolutely amazing. thnks for showing me how to make this. I'm sure my family said thank you to

    when I was a kid, a hundred years ago give or take, I use to call that soup "Leeky soup" Still my favorite. Good for you!

    Just a tip for substituting the dairy cream, if you have some cashews just throw a handful and let it simmer with the soup for 10-15 minutes before you blend, it will make it super creamy and delicious!

    Her.Name.Is.Raven • cream doesn’t thicken soup, if anything it makes it more liquid-y. But I’m biased because I hate cream.

    So it's really cold here at the moment and I made the carrot and ginger soup and asked my step brother to try it too. He says that he hates vegetables so I told him I won't say what's in the soup before he tries it. He LOVED it! And when his two friends came visiting, freezing from walking outside, he even asked if I could reheat the soup so that they could get some, and guess what? They absolutely loved it as well, and even called me a brilliant cook! Haha, I had to tell them where I got the recipe and how easy making this actually is! Thanks!

    The Domestic Geek could I use a splash of milk instead of cream in the tomato soup? I know it wouldn’t be as creamy but it would still work to lighten it up a bit and not taste as rich wouldn’t it?

    I made the carrot ginger soup..but added a can of thick, sweet coconut milk from Trader Joe's!! I saw a different recipe that used it and it sounded like a great idea. It was AMAZING! I was super worried because I couldn't imagine carrot soup tasting that great, but I had a huge bag of carrots leftover and my husband LOVED it too!!!

    These look fabulous. My family's favorite fall/winter soup is Yellow Split Pea. I just cook onion, a little carrot, celery and sausage. Then add yellow split peas and broth. Cook for 45 minutes and stir with a whisk (we don't like it super smooth). So easy, cheap, delicious and healthy... AND it freezes well.

    Side note: I made the tomato soup awhile back bc that's a house favorite and this one couldn't be tastier!!! I made it totally vegetarian bc I had no milk or cheese-I simply added a few more spices and also substituted town sugar for coconut sugar. I didn't even miss the dairy it was so flipping delicious!! Thank you for posting yummy and creative recipes :))

    Wouldn't that make it vegan? My understanding is that vegetarian is no meat, but will do dairy and some will eat unfertilized eggs but this is largely person to person as I have encountered many different people who are vegetarian and have different levels of earring habits/restrictions. And then vegan is no animal products at all.

    @@toothless3835 not all sugar is vegan. Most manufacturers of sugar use bone char to bleach the sugar, and brown sugar either has molasses or golden syrup added for the brown colour. Im not sure about other alternatives like coconut blossom sugar but I've heard that vegans use maple syrup.

    You are SO awesome woman! I grew up farming at our uncles dairy in the summers (1960's) and grandma put EVERYTHING in mason jars (thereby my LOVE of Mason jars!) So your style of cooking makes me feel right at home... Love, love, love it!

    in ireland, leak and potato soup is so so so popular, and i just thought i'd tell you this to up your soup game this winter, adding about 70-100g of blue cheese and blending it with the rest of your mixture adds the most delicious taste, you HAVE to try it :)

    The soups are amazing. I just made tomato soup today, I didn't have parmesan rind nor grated parmesan so I used grated cheddar cheese but the soup tastes equally amazing and tasty. Thank you so much for this recipe. :D

    Made the tomato basil and potato and leek, yum!!!! I had mushrooms on hand and added to the potato and leek which added another level of flavor. These are so easy to make and definitely will be making again.

    For the leek cream, you can also add a bit of curry :-) It gets along very well with the cream and it can look a bit more sophisticated. Love your videos! :-)

    Watching this video late but, hey, still incredible recipes! I love winter especially because I can curl up with hot cocoa, and decorate the tree, but most importantly cook and bake! Warm cozy soups on snow days are amazing and sometimes the canned stuff doesnt make the cut. I love tomato and potato leek but I was not sure about the carrot ginger, but they were all amazing thx for these recipea

    Goodness, I always freeze the green parts of the leek to use in broth, or chop it up for stews and such. Sure the flavour is a lot sturdier, but it's still super good, and a shame to just discard :(

    veg broth is easy, I keep a bag in the freezer and throw scraps in, when the bag is full I roast them, then simmer them, then separate and you are done. Use any aromatic vegetable, onions, leeks, shallots, celery, celery root, carrots, parnsips, fennel, etc. Mushroom stems go in too. Any old or dried herbs will work too.

    love it I'm not vegetarian myself but have a few vegetarian friends and I was advised using parmesan cheese makes it non vegetarian as the rennet used for this cheese is animal derived

    As another non-vegetarian, isn't all cheese "animal derived"? I understand there's a difference between rennet from inside a (dead) calf's stomach vs. milk from a (live) cow, but they're still both animal products. Sounds like your friends lean more toward veganism than vegetarianism - in which case they wouldn't be eating any type of cheese anyway.

    This is a great video, I love the fact that the soups are vegetarian. However, I have a heads up, Parmesan is not a vegetarian cheese. Parmesan contains rennet, which is an enzyme derived from the stomachs of animals (lambs, calves, goats, etc.). Vegetarians should definitely abstain from Parmesan cheese.

    Nimity Tei no, she's right!! Is Not vegetarian ... just google it. 'Is parmesan cheese vegetarian' and there you have your answer. Believe it or not some cheeses are NOT vegetarian, usually soft cheeses are vegetarian (cottage...) and there are substitutes for rennet, but you have to check carefully the contents of the cheeses you're consuming.... Hope this helps you.

    A google search still didn't enlighten me. Since when were enzymes, pure proteins that accelerate chemical reactions, considered meat? This particular one sourced from animals, sure, but eggs are also a bunch of proteins made by animals and are considered vegetarian. So confuzzled...

    Good point! I wonder that myself. In the end, I guess the most important thing is to be informed so we can make decitions about what (and what not) we want to eat. But I agree with you about the eggs, despite being considered vegetarian, it's still controversial among many.

    Vegetarian doesn't mean abstaining from cheese...that would make it vegan, which she never claimed it was. Nothing is a more pure cheese and made under strict format than Parmigiano Reggiano, the purest and original Parmesan Cheese from that region of Italy.

    Coconut milk/cream in soups is an awesome replacement for dairy. I've also cooked the dark green part of leeks and it turns as soft and delish as the rest.

    I have made all three of these soups over the last 2 nights and OMG they are fantastic! I love them. The tomato is so incredible I will never go back to canned soup. Homemade all the way. I want to get a bread maker, could you imagine fresh homemade bread with these soups. Thanks :)

    Parmesan is not a vegetarian cheese, lipase and/or rennet come from the cow or pig's body, therefore it is not vegetarian suitable. Kraft makes parmesan with out these two ingredients, so if high quality can pass, give the kraft cheese a try!

    I made the potato leek soup for me and my grandma, we both thoroughly enjoyed it, I also took the advice and froze the leftovers in Mason jars for work. I'm going to try the carrot ginger next, would love to see more soup recipes 😄

    As a nurse, I'm so happy with how, thorough you were with cleaning the leeks. I watched this beacause I too think tht pureed soup i perfect as a workday lunch. I have 1 box in the freezer for complete workday lunches. I started this after I came to work with sauce and veggies from different meals and no proteins.
