This is filmed so creatively! I can’t not watch! How clever to pull us in with the sassiness of the cook! My 85 year old father LOVES creamed corn and hardly anyone else does but these recipes look like they have the potential to change our minds.

The other is kind of a slimmed down version of how cakes because, he for one didn’t use a heavy corn bread mix and he didn’t put creamed corn in his!

I remember, blending corn as in the first recipe. It simply tasted just like corn meal. Was disappointed.

True creamed corn is cutting the corn halfway of the kernels on the raw ear of corn. Then scrape the rest of the kernels of milking the corn of its milk. Then canning it without water, just salt. It takes a lot more corn to cream it than using the whole kernals.

The first recipe…… The Fannie Farmer cookbook calls them “corn oysters”. My Mom called them corn fritters, and made them frequently. It was an ideal way of making a cup of leftover corn stretch to feeding 5 hungry people. I made them at work recently for my fellow Lunch Ladies. They enjoyed them. We ate them as a kid too and put maple syrup on them.
The recipes are always creatively great, but the actual food entertainment factor is always off the charts.
Good to see these old recipes coming back, they have been around for ages, makes me laugh how you are making your videos 🤣
The first recipe is the starter for when I make shrimp and corn soup. I add a touch, just a touch of crab boil to it to give it a SLIGHT spicy flavor. The corn fritters or a hot slice of cornbread goes great with it. Shrimp and corn soup is a Louisiana thing, but oh so good!

I do the same except I use freshly shucked oysters added at the end left to poach then drizzled with cream sherry and a pinch of curry powder.

I also do corn and (insert crawfish, crab, shrimp) "bisque" because I live here too. No crab boil added for me but I do get it why some of us do. In my opinion, our corn - harvested immediately to be prepared immediately is special depending on the variety and I appreciate it very simply with salt, butter, stock. No cream or milk....just a shitload of butter for my "bisque" iterations. Most often the corn is simmered and a smooth Vitamix puree with stock and butter, celery, onion... and the garnish is shellfish protein we have on-hand at service. Just my opinion. I'm certain you all create outstanding, sexy food. Cheers

I have been making corn fritters for at least 35 years. my granny in Kentucky taught me to make these. we eat them with either butter melted on top or pancake syrup. 1 can of corn will make a big plate full. you can also do these with pancake or waffle mix instead of mixing in just flour.
It’s a sad moment when one can only give you one thumbs up……Delicious job👍👍👍

No, your not getting it. The recipe calls for both of the preps to be mixed together, then tried into fritters.

When I was a kid, my Dad got paid twice a month, so there were three to four three-weekend paychecks per year; that's when Mom would make corn fritters. Easy, cheap and nutritious.

Looked like creamed corn in the first recipe - I like it a little more with the corn nit quite so emulsified. The second one is exactly what I’ve been craving - I’m originally from York County, PA and my Mom always made corn fritters - that’s what they are/were called - we ate them with some syrup in top. Hoe Cakes, but, you use cornbread, which he didn’t and, some recipes for hoe cakes will call for a can of cream corn and then, a can of whole kernel drained. Think of this as a slim down version. My grandma had a cast iron skillet was shaped with ears of corn and would put them in the oven to bake.

Thats crazy. You're from PA and my maternal grandmothers family originally came through/from PA loooong ago and grandma made corn fritters too! We live in north central Iowa and the Germans and Norwegians around here never heard of them!

Same here. My mom would make a huge batch, we'd eat them for supper, and then snack on the leftovers for a couple of days. The only change I'd make from the recipe shown would be to add onions to the mix and fry them in butter, not olive oil. Yum!
