Some customers may have a latex allergy. I would suggest switching to nitrile gloves and researching "latex allergy cross reactive foods". This will increase awareness for staff, decrease liability for the restaurant, prevent wasted product (as anything served would have to be discarded in the event of a latex allergy not to mention even the powder in the glove (which can go airborne) can also initiate an allergic reaction in some cases), and put customers at ease. If there were a case of an allergic reaction to staff wearing gloves, or the latex protein on what's being served, the restaurant would be liable for medical costs including ambulance transport, pain and suffering, potentially lost wages or even be liable in a wrongful death suit. - helpful advice from a chef & firefighter .

I appreciate the skills of a Japanese master chef above any others in the World. The care and devotion to cooking food is beyond reproach and comes with a life time knowledge and experience of perfection. If I could afford 10,000 a week to eat at Benjamn's in Tokyo I would be a happy man. Once was an experience of a lifetime.

This reminds me of a recent "Eater" episode... think it was called "The Hawksmoor" in NYC? Man this place is the real deal; Salt-crusted aged steak on a two-burner setup... lobster, caviar, oysters, prawns... a legit classic stew... burgers.... mashed potatoes, fries, calamari, mac n' cheese, creamed spinach - all the classic sides... full suite of deserts... plenty to drink for the boozers.... and absolutely classy decor to boot. Hell even the staff lunch looked delicious. Looks absolutely awesome!

*Tokyo... correct spelling, is the 1st step. If you can't spell it you won't be able to find a flight. I'd also suggest looking up "dos and don'ts" for Japanese tourists" not just for etiquette and a good trip but their laws are strict and they're known for forcing confessions, they don't presume innocence.
