I have easily tasted around 100 different crème caramels in my life but I have never tasted one as good as the one my mum makes, which originally is a recipe from my great-grandfather who was the Master baker in Burgos most renowned bakery. The earliest memory of my life was my mum cooking this very dessert and as it couldn’t be another way it then became the first ever dish I cooked myself as a 5 years old kid. As you have probably worked out by now, this “flan” is very close to my heart and I hope everyone of you who bakes it finds it as delicious and delicate as I do.

Hola Omar! Thank you so much for this recipe! I’ve been trying for years to make the perfect flan . I am so glad I tried your recipe and it worked! The best tip is to cook it without simmering. Hi Omar, I need to try this recipe because I really want to make a proper flan. Since I saw your Tortilla de patatas video in Jaime Oliver's channel I trust your recipes more than any others. Por cierto, mi madre tiene exactamente los mismos platos, con los árboles y el carro :P

Can you please share more details about your paella pan, I've been searching for such a great coolware for years
It's awesome that you invited your Mother to this video :) (although the music was a little bit too loud when she spoke) May I ask - is the condensed milk sweetened? In my country we can buy it in 2 versions - sweetened and unsweetened. Is there anything sweet in the custard itself?

Hola, thanks for the note on the volume, I didn't realise, sorry. The condensed milk is sweetened yes, otherwise we call it evaporated milk. Which country you live in? It's very sweet as a result so no need to add any sugar. Enjoy!

@@thespanishchef Ah, thank you! Good to know! I live in Poland and for us the "default" version would be the unsweetened one (and both are called condensed). The sweetened one is - indeed - very sweet! I'm looking forward to trying this recipe :) Also, I appreciate a lot the fact that not only you show us how to prepare a dish, but you also explain WHY you're doing some things - like pushing the flan's edges here or cutting the middle part of garlic in other videos. The reasoning is very useful and I miss it in many cooking shows :)
