Egusi Stew - Precious Kitchen - Episode 54

How to make the best Egusi Stew! Egusi, also known as melon seeds is typically eaten in African countries like Cameroon, Nigeria and Ghana. It is mostly made into a soup called Egusi Soup. I love making Egusi Stew. It is so full of flavor, so luscious and can be paired with so many things (rice, yams, plantains, garri, etc)!

    Just made this recipe for dinner(minus the habanero pepper. 😂 I used a little ground cayenne pepper instead and that was perfect for us) and it has been a huge hit!! Everybody in my family loves garlic and ginger so this recipe was perfect. I wasn't able to get any actual egusi seeds so I used pumpkin instead. That made the stew a little darker, but still delicious! I served it with my first attempt at "fufu"(I don't think what I made could really be called fufu, but hey, it still tasted good. 😂) using plantain and sweet potatoes. Next time I'm gonna make the fufu well ahead of time so all I have to do at dinner is warm it up, and use a blender so I can hopefully get it much smoother than it turned out tonight.
