Egg Yolk Cookies Recipe | Best way to use leftover egg yolks

Are you looking for a delicious way to use up extra egg yolks? Check out my egg yolk cookies recipe to make cute one bite cookies. Egg yolks make the cookies slightly crumbly with extra rich and buttery flavor. These popular Korean egg yolk cookies are a delightful addition to a cup of coffee or tea!
📋 Ingredients:
All-purpose flour - 1/4 cup + 2 tbsp (48g)
Almond meal/flour - 2 tbsp (12g)
Cornstarch - 1 tbsp (10g)
Unsalted butter, softened - 3 tbsp (42g)
Sugar - 1/4 cup (54g)
Large egg yolk - 3 (48g)
Vanilla extract - 1/2 tsp (3g)
Salt - 1/8 tsp
👩‍🍳 Instructions:
1) In a mixing bowl, beat the softened butter and sugar until light and fluffy, about 2 minutes.
2) Add in salt, egg yolks, and vanilla extract. Whisk until well combined.
3) Sift flour, almond flour, and cornstarch and mix until obtaining a nice soft dough.
4) Place the dough into a piping bag. Pipe 1-inch diameter circles of dough onto a parchment paper-lined cookie sheet.
5) Press down the egg yolk cookie dough with a lightly damp fingertip to have a smooth surface.
6) Preheat the oven to 320°F (160°C). Bake until edges of cookies are lightly brown, about 10-15 minutes.
7) Set aside to cool to room temperature.

    Today I have tried this recipe and it's turn out too good. As I don't have almond flour so I replace it with all purpose flour and the rest as same. Soo happy with the results ❤

    Sorry, I have never tried making the new yolk style banana pudding. When I look up the recipe, wafers are used but these cookies won’t have the same texture.

    Hi, thanks for checking out our video! The reason why I’m adding cornstarch to all purpose flour is to make cake flour, which gives lighter texture due to low gluten content. You can replace cornstarch with flour for now but the best result is to use cornstarch as the recipe says. Have fun baking these cute egg yolk cookies. 🧡

    You can try replacing almond flour with all-purpose flour instead but won’t have that extra yummy flavor without the almond flour. Please give it a try with just flour for now and let me know how it turned out ❤

    Oh sorry to hear! The fat in the egg yolk cookie dough melts in the oven. If there isn't enough all-purpose flour or almond meal/flour to hold that melted fat, the cookies will over-spread. Try measuring using a scale accurately or slightly increase the flour to look like the dough I have in the video. Please give it another try and let me know how it works!
