I make this with salmon head. I use wood ear mushrooms and had half package of firm tofu at the end. Thank you for your recipe. Sometimes salmon head is not available

Very comforting on a cold&rainy day. I let the herbs infuse much longer, like 2h, the perfume in the house was amazing and very fresh. Don't be afraid on the chillies and paste, you have some volume and the milk will quieten it. Maybe I would add lime zest, in the plate to improve the freshness . Our family, 50% Asian, 50% European...French....liked it. Thanks for sharing.

Ginger and galangal are different. mostly galangal use in the paste and put in the soup just for an aroma. But for the ginger (young one) mostly use for cooking and drinking 😊

First Thai person I have ever seen smart enough to remove lemongrass, lime leaves and galangal rather than EVERY restaurant in Thailand that leaves them in. 😊
