Easy Spinach Ricotta Stuffed Shells
Ingredients:
16 to 18 Pasta Shells
2 tbsps. Olive Oil
2 pcs. Garlic ( minced )
200g . Fresh Spinach
300g. Ricotta Cheese
1 cup Mozzarella Cheese
1/2 cup Parmesan Cheese
1 pc. Egg
1 tbsp. Fresh Basil
1/2 tsp. Salt
1/4 tsp. Pepper
400g. Tomato Basil Sauce
Extra: for serving
Parmesan Cheese
Fresh Basil
Instructions:
1. Prepare pasta according to package directions.
2. Heat olive oil in a pan and saute minced garlic. Add the fresh spinach and cook for 4 minutes.
3. In a bowl combine cooked spinach, ricotta, mozzarella, parmesan, egg, salt, pepper and fresh basil.
4. Fill each pasta shells with spinach ricotta mixture.
5. Spread 300g. of tomato sauce into the baking dish. Arrange the filled pasta shells and pour the remaining tomato sauce on the top of pasta shells.
6. Bake at 180 C for 25 to 35 minutes ( Note: cover with aluminum foil and bake for 25 minutes. Remove the cover and bake further for 10 minutes. )
7. Sprinkle with parmesan cheese and fresh basil.
8. Serve immediately.
