Easy Sourdough English Muffin Recipe | No Ring Cutter | Sourdough Discard Recipe
I'll show you how to make the easiest and most delicious sourdough english muffins! Did you know that some store bought sourdough english muffins use vinegar to get the right flavor?!! I was shocked when I learned that and decided to make my own. Mine are thick and fluffy and I’ll show you how I get the perfect nooks and crannies! Many english muffin recipes use ring cutters but I don’t like dealing with dough scraps so I’ll show you how I make mine without them. I'm making the vegan version of these in the video but will give you recipe options for the non-vegan version.
Recipe (yields 8 large english muffins)
500g bread flour (approximately 3 cups + 2 Tbs)
2 tsp himalayan pink salt
1 Tbs white sugar or honey
3 Tbs grapeseed oil (any vegetable oil is fine, or substitute with melted butter!)
2 Tbs unfed starter from fridge
1 ¼ cup room temperature water
¼ cup of fine cornmeal + 1 Tbs flour for dusting
Optional additional grapeseed oil for pan

I made these and they turned out great! Will be trying your bagel recipe next. 🙂 For those wondering the metric equivalents, I used: 500g flour (I used AP) 275g water (55% hydration) 30g oil (I used avocado) 25g sugar (I used honey) 30g cold unfed stater from fridge 10g of salt (This is lower than what the recipe calls for at 2 tsp) And I used durum semolina flour for dusting (just didn't have cornmeal on hand) Followed the directions as outlined by Rosie.

The idea of not using a cutter it’s fantastic! I have to give this a try for sure. I make sourdough English muffins at least once a month and even though I have a recipe that works great it doesn’t hurt to have options. Thank you for sharing 🙏🏼

This was the first recipe I've seen where the muffins had some air bubbles. The rest just look like bread in the shape of an English Muffin. I want an English Muffins that has air bubbles, nooks and crannies. I'm going to try this one tomorrow.

My husband said they were the best English muffins he’s ever had. Next time I will let them do their final rise on a tray covered with a tea towel. The muffins stuck together and stuck to the pan. Fun fact: Half of the contestants on the Great British Baking show failed at the English muffin challenge. I can’t believe I just made perfect ones!! Thanks Rosie!

You are so right. I gave a muffin sausage and egg burger for lunch most day. With a cup of coffee, YUM!
These English Muffins turn out great! I've already made them three times. I'm a new baker and the recipe was really easy to follow. Also, this recipe ends up making BIG muffins, so they're perfectly sized for a sandwich.

I chose this recipe for my first "no commercial" yeast attempt at sourdough baking. They turned out amazing! I toasted one and ate it with peanut butter and jam. The crunch was exquisite! Thanks for your great recipe and instructions!

Loved these! I used honey instead of sugar and they were delicious. I set them in the fridge overnight, they sat in the fridge for about 14hrs. I cooked just as you said then I put them in my air fryer (350 for 8min) they were perfect. Thank you so much!

Of course it is necessary to use 1/2 to 3/4 of the dough from your recipe. So I make a mini loaf also. Have your sourdough bread fermenting now.😊💛

This is my second batch and they are delicious! Making these for a change instead of bread subbing in a cup of whole wheat flour- they freeze well with a little parchment between them. Your videos are adorable. You must work with small children?

I made these and they came out great! I was really surprised, they even had the little nooks and crannies and a really great flavor! This is my second attempt at one of your bread recipes. I've been very pleased with both outcomes! Thank you Rosie!

YAY!! I'm so excited for you to try these and I love the Bahamas! What a beautiful location. It it's warm in your home, you might want to let the final proof (after dividing into individual english muffins) happen overnight in the fridge instead of at room temperature so they don't overproof. You can just let the dough sit out for about 20 minutes to take the chill off before cooking them. Be well and happy baking!

Thank you, Rosie! I’ve been wanting to make SD English Muffins for so long, but it always felt like it would be too much work-I was intimidated! I used your recipe to make these, only I added the last of my fed starter from an earlier bake & it was like 1/2 cup. Didn’t wanna toss it lol. I got so tired last night that I had to let mine bulk ferment in the stand mixer bowl overnight w/plastic wrap covering it. I woke up with a pleasant surprise of beautifully doubled in size soft pliable dough! 😍 Mine was a bit sticky so I floured my table to knead it (I added a teaspoon of baking soda & 1/2 teaspoon salt, mixed it in good, to help w/higher muffins). I rolled it out w/a rolling pin & used a wide mouth mason jar to get my circles because I wanted more smaller ones, got 18 circles! My last 2 from the scraps I just cut in half & rolled them like you showed. Next time, I’ll cut in 8 pieces & roll like you did. I covered them & put them in my cold oven w/the light on for an hour to give them time to rise. I’ll come back after they’ve baked. I’m excited to fork them for the nooks & crannies! 🤣 Thank you for sharing & being so pleasant & cheerful! 😊 EDIT to add: THEY TURNED OUT PERFECT! They’re SOOOOO DELICIOUS! OMG! I’m going to wrap & freeze some for next week’s egg muffin breakfast sandwiches! Yummy 🤤 Thanks, again! 💝

Great idea!! You can definitely add in whole wheat flour and I've done it many times. When I add whole wheat, I use 350g bread flour + 150g of whole wheat flour. You might need a few extra tablespoons of water since the whole grain flour absorbs more water than white flour. I'd love to hear what you think if you try it! Be well!
Hi Rosie, Thanks for your recipe ! I have tried sooooo many S.D. English Muffins recipes. Yours has by far been the most sensible process, easiest to make and fantastic flavor!! I owe you at least 2 bags of flour!! My kitchen is too hot so they need to be in the refrigerator overnight, any suggestions on next morning...should they sit out to warm up a bit or could I start with the skillet right away? My second batch is in the works as I time!! I,m going to try your cracker recipe next!!

Hi Paula! Thank you for your kind words and I'm so glad you tried the recipe. That's a great modification to put them in the fridge overnight and a cold ferment develops really nice flavor. I'd recommend letting them warm up a bit so they are closer to room temperature by the time they go into the skillet, but I don't think you'd have to wait too long. 20 - 30 minutes of them being at room temperature will probably be enough to take some of the the chill off. Hi Diana! Thanks so much for asking. I unfortunately don't have the instructions fully written out but the process is really easy and timing doesn't have to be exact. I basically mix all the ingredients together in the morning and let it rest for 30-60 minutes to let the dough hydrate. I then do some gentle folds and smooth out any clumps in the dough. Then every few hours, I'll try to do a round of folds but honestly sometimes I forget and they still turn out well. By the evening, I cut the dough into 8 pieces, shape them into balls and place them in a pan dusted with cornmeal and a little flour. I cover and let them proof overnight. The next morning, I cook these in an oiled cast iron pan (oil is optional) till they are brown on both sides and then put them into a 350 deg F oven to finish baking for a several more minutes until they sound hollow when tapped. All the rises are at room temperature which is about 68 deg F during the day and 66 deg F overnight.
Hi Rosie, I will be trying your english muffin recipie this week. I tried a regular dough recipie, for english muffins and they were good but didn't really have nooks & crannies. I am excited to try your sourdough recipie, they look like they do have lots of nooks & crannies, and that is what we are looking for. I will let you know how they turn out when I make them. I would like to ask you about the sourdogh flavor, we do prefer a mild flavor, not too strong. I am fairly new baking with my sourdough starter and find that many times when I bake my sourdough breads they are too strong. Can you give me any tips on how to achieve a milder flavor? 🤔

These actually don't end up being too sour and are more mild than my regular sourdough bread. However, I do find that if I ever let the final rise (after shaping into balls) happen in the fridge instead of room temperature, the sourness is even milder. When you are ready to make them, you can just let them sit out at room temperature for at least 20 minutes so they can warm up a bit before hitting the pan and oven. My starter is particularly cold sensitive so I'm not sure if you'll get the same results with your starter but it might be worth a try! Happy Baking ❤

Hi Ryan! Thanks so much for your kind words and for checking out the video! Well...the truth is I'm just lazy and wanted a method of making sourdough that didn't require feeding beforehand. 😝 As a result of my laziness, my method does take longer but the minimal hands-on prep was worth it for me.

@@RosiesKitchenAdventures Lol, I forget to feed my starter before making bread sometimes, but still use it anyway. By taking longer, do you just mean it'll take longer to proof because of less fermentation since the starter isn't really active? Thanks again!

@@ryanrobinson3600 HA! That's awesome that you also use unfed starter sometimes! Yes, my typical sourdough method usually takes about 24 hours from the time I mix the dough till the time I bake it (kzread.info/dash/bejne/c6Npz5uqeZyaipM.html). My room temperature is also fairly cool - 68 deg F during the day and around 64-66 deg F overnight. If I happen to have fed starter and it's a much warmer day, I'm able to get away with 12 hours of total fermentation time which I go through here (kzread.info/dash/bejne/d3qI1a-dla3TkZc.html). When I was trying to figure out a super easy way to make sourdough, I knew I wanted either 12 or 24h of total fermentation time so I didn't have to do all those fancy folds to develop the gluten structure. The long fermentation makes the yeast to most of the work me in developing the gluten structure, allows the flour to fully hydrate, and creates great flavor. That's probably a WAAAAY longer answer than you were hoping for! 😆

I've made these numerous times and they taste fabulous! Although they're always sooooo sticky the whole process through and depuff when i remove them from to pan to place in the skillet. Any advice?

Hi Katie! I'm so glad you enjoy these english muffins! Lots of factors could go into the dough being more sticky (e.g. temperature, type of flour, brand of flour, hydration of starter, etc.). I'd recommend cutting down the water in the recipe a bit by maybe 1/4 to 1/8 of a cup to see if that helps. Mine also tend to depuff when I transfer them from pan to skillet but I find that dusting a bit more with the combination of flour and cornmeal after forming the balls can help. That way, they don't stick to the pan, my hands, or each other as much and stretch less when I transfer them. I hope you have a wonderful weekend and happy baking! ❤

That one looked a little under cooked (doughy) when you pulled it apart. _Would you recommend baking them longer? Maybe using a temp probe to be sure the center is 200 degrees?_ Thanks.

This recipe appears to be most like what I've been looking for in an english muffin but I need to know if I should use 500 gm of flour or 3 cups plus 2 tablespoons

Oooh no!! I'm so sorry to hear that they didn't rise overnight. Every starter behaves a bit differently and the room temperature can make a big difference too, even if it was just a few degrees cooler. Practice makes perfect and I'm excited for you to try these again!

Could I omit the corn meal and simply use flour for dusting the english muffins? I am allergic to everything corn.

Ooooh Dan, that sounds delicious! I have actually never made these with raisins and cinnamon but I make bagels with those all the time (kzread.info/dash/bejne/qIptuc9tpMe4iaQ.html). In my bagel recipe, I use 2 tsp of cinnamon and 1 cup of raisins but there's 50g more flour in that recipe. For english muffins, I'd go with 1 cup of raisins but slightly less cinnamon (1 1/2 - 1/ 3/4 tsp depending on your preferences. If you give it a try, I'd love to hear how it turns out for you!

Hiii! That's a great question and I know it's kinda unusual compared to most sourdough recipes out there. I tend to use a long fermentation time (around 24 hours total) in my recipes because it helps develop the gluten structure without the need for a lot of complex folds and kneading. In order to ensure that the dough does not over-ferment during that time, I use cold unfed starter which takes longer to activate in the dough. Fed starter would ferment the dough faster. I hope that makes sense. Welcome to sourdough making and it's definitely a journey!
Looks great but seems to me to be quite a bit lite on the starter quantity. Can you really taste the sourdough well?

Thanks for checking out my video and that's a great question! I only use a small amount of starter because I allow for such a long fermentation time but it's enough to fully ferment the dough and create a nice sourdough flavor.
My dough never aerated 😩 I did use room temperature starter before feeding - could that be the problem?

Hiii! Thanks so much for reaching out and I'm so sorry to hear that your dough never aerated. With room temperature starter, your dough should have still risen but would have fallen back down if it overproofed with the long fermentation time in this recipe. Sometimes starter can be a bit finicky so it just might not have been as active that day. I hope you keep on trying!

How much yeast would I use if I have no unfed starter?

Hiii! Thanks for asking that great question! I would use 1 tsp of active dry yeast in place of the starter. The fermentation time will be much faster though. After initially mixing the dough, you can let it rise for 1-2 hour or until it has doubled in volume. If you have time for a second rise, you can deflate the dough, and let it rise again for 1-2 hour or until doubled. After that you can shape the dough into balls and let rise about 1 hour before cooking/baking them. If you give it a try, I'd love to hear how they turn out for you!
