Ok. This is my very first attempt ever at making a Japanese cheesecake. So, I will make lots of mistakes but hopefully, you can learn from me. :) I wanted Japanese fluffy pancakes but it was just too hot to heat up the pan. So, Japanese cheesecake in the rice cooker it is. And by melting the cream cheese and butter in the rice cooker, I didn't heat up my house. Plus one less pot and bowl to clean up. I hope you'll love it as much as I did. Enjoy and Happy baking in your rice cooker!
EASY RICE COOKER CAKE RECIPES: Japanese Cheesecake
NOTES:
* 1 cup = 250 ml
* My rice cooker capacity = 1 litre or 5 cups
* Please READ Important TIPS at the end of each video
INGREDIENTS:
• 1/3 cup (60g) MILK
• 2 tbsp + 1 tsp (40g) UNSALTED BUTTER
• 5 ounce (140g) CREAM CHEESE
• 1/2 cup (50g) ALL PURPOSE FLOUR
• 2 tbsp (15g) CORN STARCH
• 5 large or 6 small EGGS (yolk & white separated)
• 1/2 cup (100g) SUGAR
HOW TO:
1) Put milk, butter & cream cheese in rice cooker, then turn it on. Close the lid for 1 min, mix then mix. Close again for 30-4 minutes, try not to let it boil (yeah, mine boiled a bit). Remove the pot from the cooker and mix until cream cheese melted and smooth. Make sure to scrap the sides.
2) Add flour and corn starch to cream cheese mixture, then mix well; scrapping the sides
3) Add egg yolks to batter and mix well
4) Put egg white into LARGE mixing bowl (yeah, I started with a small one then had to transfer) and mix with electric mixer until fluffy. Add a bit of sugar as you mix, every minute or so. Mix until creamy and the peak stands up (yeah, mine wasn't). Beat for about 10 minutes.
5) Add about a cup of the egg white into the batter and slowly (UPDATED) fold in with spatula, do not mix with hand whisk. Slowly add more egg whites and slowly fold it until done. It's important to not over mix here.
6) Use spatula to scrape the sides and break up bubbles. Use chopstick to break up more bubbles, going in circular motion. Also slam your pot onto the counter to break up bubbles.
7) Bake for 2 COOK cycles, then check. Remove from heat and let it cool for 30 minutes or so
8) Loosen the sides with a spatula and use your hand to slowly pull the cake off the bottom. Then turn it upside down onto a plate.

    Works great if you pay attention to instructions. kzread.infoUgkxviiltW7NlHbp_VL_bLbIkbLAvILVhnia For those that complain about "mushy" or "wet" rice I suspect they are using the included cup to measure rice (which is really only 3/4 cup) and then putting in water using a separate measuring cup that is a full cup. This results in too much water and you will get mushy or wet rice and think it is not done. Just use the included cup for both rice and water, or your own measuring cup for rice and water according to your package directions. It will come out fine. I've used mine for years for brown and white rice. If your machine is bubbling white froth out of the steam vent then it means you should have rinsed your brand of rice first to remove some of the starch. Sheesh. Makes me wonder how people can cook well enough to feed themselves.

    Hi Ms Pang, a little advise, don't use whisk when you mixing the egg white and batter. Use spatula. Single circular motion. Do not mix right and left circular motion. It will create more bubble. Hope this will help.

    I like the fact that you showed everything as well as what mistakes you might have made. Still looks like the cheese cake turned out fine. Who ever thought you could do more then cook rice in a rice cooker? AMAZING 😉

    Just fold the ingredients together using spatula, never wirewhisk coz it can create lumps and bubbles.

    I love your recipes and appreciate the time you take to share them. How I WISH I could find eggs with those orange yolks I see used in all the Asian baking videos, short of raising my own chickens this wouldn't be possible😣 One thing I did wish to share with you, egg whites will NOT whip stiff if there is ANY yolk present period. On your almond cake video there was a considerable amount of yolk in your whites, you commented that the egg white remaining in the bowl because you didn't use a stabilizer. I wish that were true, but it isn't, I was surprised you got the whites as stiff as you had (they were dry, but not stiff) given the amount of yolk that was present in your whites. I hope you will accept this as a helpful tip ( the spirit which was intended) not as criticism, I truly enjoy your videos🤗

I'm learning so much with this baking! 😁 I found out later that there should be no yolks, no oil residue, should be at room temp, adding salt/lemon juice/cream of tartar, when to add sugar and why... 😳😱🤯 It's enough to make me not want to bake! 🤪 But, I'm all for learning and I enjoy the end results! 😋😋😋 Thanks for watching and commenting! 🥰

    That's wonderful! Just watch a few other videos for the techniques of this particular types of cake. It is a very finicky cake to make ... even in the ovens. Everything depends on the egg whites and how you mix it so just prepare yourself for it 😉

    Bubbles form when you do the mixing in different directions We were taught in hs food trades when mixing especially for cakes Do it clockwise all throughout or counterclockwise whichever you are comfortable with

    Awe 🥰 Thank you! I hope it will turn out well for you. Lessons learned from this cake.... beat the egg whites longer, until peak stays up. Don't use hand whisk to combine the whipped egg white to the batter. Use a spatula and fold in lightly... Good luck! This was my very first ever of making this cake. But I think the 2nd cake, Japanese Chocolate sponge cake, I did a little better. 😄

    It is Japanese cheesecake. A lot different from traditional cheesecake though. I'm not sure about topping it with anything with juice or liquid. It may turn the cake to muss. You can refrigerate and maybe top it right before serving.

    If you like a rich and airy cake without a lot of sugar? This cake is perfect! And, I make it so easy by doing everything in the rice cooker! You really should try this. BUT, don't try it without having an electric mixer. :)

    I'm sure i could do the egg white with a hand whisk , I'll try anyway . As i have to have a gluten free diet , only seed and nut flours i have to make my own. Its all trial and error . And as i said recently ( banana cake ) its too hot to use the oven so i'm so grateful for these recipes. K

    Hi Louisa! Thanks for watching! Yes, do try it. That was my very first attempt at this cake and I made a few mistakes but it still turn out good. I over mixed in that one. So just use a spatula and fold the whipoed egg whites into the batter gently. And do not oil your pan. It needs to stick to the pan to rise. Good luck! Let me know how it turns out 👍🏼

    I've a basic rice cooker with a small hole provided in the lid for air to escape. Is it necessary to close this while cooking? Asking this coz your lid looks (almost) air-tight.

    Hi @Hurryup Yes, you can still bake with your rice cooker. Some recipe may work better than others as yours do not close tightly. But just put a paper towel on top before closing and do not open until after the 2nd or 3rd bake cycles (about 1 hr 30 min or so).     I don’t have a rice cooker like yours - my rice cooker says white rice, brown rice etc what should I do? Can I do it in an Instapot?

    I don't have one like yours and have not try it. But I think using brown rice setting is good. After it is done, do not open but let it rest inside for 20-30 minutes. Then open and check to see if it is done or not. If not done, use brown rice setting again then check again. As for Instapot? I do not have one either but you can search online for correct setting to bake cake. Good luck.

    I think if you only fill batter to line 3, you should be ok. Usually, any recipe with 1 1/2 cup of flour should be the maximum for your rice cooker. This Japanese cheesecake may rise a bit more so only fill to your maximum line. Or bake in two separate batch. This recipe is already at minimum amount but you can try to reduce and see how it turns out.

    I have not test it with sugar substitutes so I'm not sure how it will turn out. If you want to try, be sure to use granules and not liquid or syrup. Let me know if you do try it and how it turn out

    If you look under Aqua faba you can see how to. Oh and yes Aquafaba is actually bean water from a mild unseasoned bean. Fluff the bean juice after adding sugar it fluffs up amazing. You tube has tons of videos on it.

    Hello Steffi. I would not recommend using regular sliced cheese in this recipe. Cream cheese and sliced cheese are completely different. I don't know what would happen if you do use sliced cheese. I have never done that before. You may end up wasting good ingredients.

    Any milk is fine. The main important ingredient in this recipe are the eggs... beating the egg whites until a stiff peak and then using a SPATULA to fold the egg whites into the mixture slowly. I did mine wrong in the video, that's why I had too much bubbles 🤭

    Unfortunately, Amazon USA does not have my exact Sharp brand. The link is to the Tiger brand that is similar to my Sharp one, if you wanted a similar rice cooker. But there are so many out there...it's confusing 🤪 to me 😂 I like simplicity for now.

    Thanks! I like to make things simple and easy to follow. I usually just cook for my family so I use my hand all the time. But I wash them very often while cooking or baking. When you see me handling with my hand? I just washed my hands. I'm pretty conscientious about cleanliness but yes, people should handle food cleanly.

    Great question! This is my first time making this but that is a concern for a few people as well. The cream cheese definitely help calm the egg tastes a bit. I'm planning on making the Japanese cake itself in the future. I'm hoping it will help to calm the egg taste even more. Stay tune!

    I'm sorry to hear you unsubscribe just for that one comment. I don't think it was specifically this recipe but the Japanese sponge cake in general. Due to the amount of eggs it does taste different. Some don't like it but most do. I hope you will reconsider subscribing because I have many other recipes.
