EASY RICE COOKER CAKE RECIPES: Carrot Cake with Cream Cheese Frosting | No Oven Cake Recipes

Of all my rice cooker creations, this is my favorite so far. It is so tasty, creamy, moist, with just the right amount of sweetness (my taste is less sweet) and oh so EASY! Don't skip the cream cheese frosting! It really is the icing on the cake! Happy baking in your rice cooker!
EASY RICE COOKER CAKE RECIPES: Carrot Cake with Cream Cheese Frosting
CAKE INGREDIENTS:
• 4 LARGE EGGS, room temperature
• 3/4 cup (255g) HONEY, or sugar (1 cup if you like it more sweet)
• 1 cup (209g) COCONUT OIL, or vegetable oil
• 2 cups (280g) ALL PURPOSE FLOUR
• 1 tsp (7g) BAKING SODA
• 1/4 tsp (1g) BAKING POWDER
• 3 cups (270g) SHREDDED CARROTS, 4-8 carrots depending on the size
• 1 cup (125g) CHOPPED WALNUTS
FROSTING INGREDIENTS:
• 16 oz (450g) CREAM CHEESE, at room temperature
• 1/3 cup (75g) UNSALTED BUTTER, at room temperature
• 1 1/3 cup (200g) POWDERED SUGAR
• 1/2 cup (65g) CHOPPED WALNUTS, optional topping
CAKE INSTRUCTIONS:
1. Peel carrots and shred or grate them
2. Mix Eggs and Honey (or sugar) using electric mixer on HIGH until thick and fluffy (about 3 min)
3. Slowly add Oil into egg mixture as you continue to mix for about 1 minute
4. Whisk flour, baking powder, baking soda in a separate bowl
5. With mixer on MEDIUM, Add flour to batter in small amounts...scraping sides as you mix
6. Fold in shredded carrots and walnuts until combined
7. Divide batter in half and bake each for 2-3 cooking cycle in your rice cooker
8. Let cake cool for 30-40 minutes before icing them
ICING INSTRUCTIONS:
1. Mix butter with powder sugar, scraping the sides as needed on MEDIUM speed
2. Add cream cheese one at a time and mix well
ASSEMBLE CAKE:
1. Ice top of one cake then place the other cake on top
2. Ice top of 2nd cake and all around the sides
3. Top with chopped walnuts
OVEN BAKING:
* If you want to bake in a regular oven...
* Bake in two separate round pan at 350 for 30-35 minutes until toothpick comes out clean

    I like the way you show your mistakes. Obviously you are not bothered about saving face, and good for you. A wedge cake slicer may help. But then we wouldn't get to see any blips. Great videos with very clear instructions. Keep them coming.

    @@ricecookerbaking Absolutely. After 34 years living in Thailand it still irks me to see the way the face issue dominates all aspects of life. No one admits to making a mistake. Making mistakes is how you get experience. Enough of that. I have just cut some bananas down and will wait for them to ripen up and have another go at your banana recipes. Aroi mahk. Delicious!!

    This one, you need the cream cheese frosting to really make it taste great, if you decide to make it. The cake by itself is not very sweet. Definitely add a frosting 😋

    @@zjzj6800 My only problem is I don't have a quiet space. My AC and fans are constantly running because it is so hot. The birds, vehicles and constructions close by are all picked up by my microphone. But hey, maybe some day... eh? Thank you for the suggestion.

    That's great Nathaniel! I'm glad it turned out well for you 😁 This carrot cake is a bit big. If you want only 1 layer or smaller amount, just half the recipe. Oh, and you would love my carrot apple coconut cake as well. Happy baking!

    Hi pang. I have tried a few of your rice cooker recipes and all of them arent fluffy as how cakes should be. Could it be because I have used too much flour? Thx

    Hi AWSC88. If you are baking them in the rice cooker? Then your observation about the cakes not being fluffy is correct. The rice cooker cakes will be more soft moist and somewhat dense because it is being cook with steam (hot wet air). And the heat is not consistent or dry like an oven (hot dry air). So the cake will not be fluffy as an oven cake. I think my Pandan cake came as close to a fluffy cake as it can be. 😄 And keep in mind, my taste in cake texture may be different from yours. I actually prefer the rice cooker cakes over oven cakes. On top of that, each cake or sweet bread is different in texture, even when baked in an oven. So, it really depends on your experience and expectations. I'm just happy I can bake what I like and put what I want in each recipe in my rice cooker. 😋 As for using too flour? If your measuring tools (food scale, solid and liquid measuring cups) are standard baking tools? Then you should follow the recipe as close as possible. I learned that converting a cup of flour to grams varies wildly in all recipes. If you search online, sometimes a cup could be 130g, 135g, 140g, 150g Aaaaaaaaahhhhhh 😜🤪🤯It's quite nerving. So, if you have proper measuring tools? It will help a lot. The addition of fresh fruits and vegetables will also cause variations as well. So, yeah... we both can use the same recipe and get slightly different results. I'm sorry that's a lot of stuff to respond to your question but I hope it helped a bit. 🤔🤭Thanks for asking. 👍🏼

    Hi Kathy. Welcome to my channel! I'm glad you are enjoying my videos! 🥰 Yes, there are hundreds of rice cooker out there. Just Google images of rice cooker. It's quite overwhelming. But you have to decide what you want to do with it and how much you want to spend. I would say, if you want to bake in it? Get one with the CAKE or BAKE option. It will be much easier. Mine is the very simple one button because I was only cooking rice. But learned to use it for baking later on 😆 I think a 1 liter (5 cups) or 1.8 liter (10 cup ) size is a nice. But it depends on your need. Next rice cooker i purchased will be one step up to include the BAKE/CAKE setting 😁 I hope you are inspired!

    I think olive oil would change the taste so I would not recommend it. You can use any other vegetable oil that has light to no taste and it should be fine.

    When I decorate cakes if the frosting is too dry you can dip your knife in hot water and SPREAD your frosting , give it a upward turn on the top to form peaks. On The sides of the cake smooth the frosting with the knife and do not put so much frosting on the sides of the cake.

    It depends on what you are trying to measure. Each ingredient has different weight. I didn't start to add the grams and millilitres measurements until more recent recipes. Looks like I might need to go back to my older videos and add them ... you can use Google to give you grams weight too.

    The recipes are pretty easy. This one takes a bit longer because it is a two layer cake with frosting as well. But, you should still try it. If you like carrot cake, you'll love this one.

    Hello Navi. I'm sorry but I am not sure as I have not try this cake with no egg. It needs 4 eggs so it would be hard to replace. Maybe check my no-egg and vegetarian playlist...     Hi Darius. I'm sorry you don't like the music in my videos. This video was posted in Sept 2018. Unfortunately, I cannot change the music without completely deleting the video and re-uploading. Doing so will impact my KZread numbers. Plus I do love music in my videos so they will continue to stay. But I have lower the music volume when I'm talking.
