Poking holes in a turkey allows the juices to migrate away from the meat. Especially the breast portion. I know this from utilizing several methods over nearly 50 years. Marinate overnight in spice, acid and herbs that you like then roast covered or smoke for the required amount of time. Include the marinade safely in the process.

You won’t get salmonella actually. Meat is pasteurized when it hits 155 and stays there for a minute. So 160 is perfectly safe to eat. 165 just kills everything instantly but germs will die over long periods of time too. So don’t be discouraged, 160 will be more juicy and carry over heat will bring it to 163-165 😁

I actually put the neck and giblets parts in the pan with chicken stock and veggies for the turkey drippings so I can make gravy out of it. It gives it a more full flavor of gravy

My family wants me to actually smoke our turkey using fire and skill. Not easy bake it outside on a pellet thingy and I always cook the neck. It gets done quick & I can taste it to see if I need to adjust my cook.

Although i agree with the 160° mark, after using the charbroil big easy with herb butter (inside the skin & outside) anything else is too much work. The turkey came out 10/10 and everyone (14 people) agreed. It was effortless and amazing. Let it rest for at least 45 minutes
