Just finished mine. I usually fry but I wanted to try it on my pitboss. It came out great. Didn't even brine it. Just cleaned, spatchcocked, seasoned, then let it sit for bout an hour before threw it on the grill. Tender and juicy with crispy skin. Probably done with the deep fry.

Yeah also if you use peanut oil to deep fry turkey it’s very expensive 😞!

Out of curiosity, why 225 for two hours? Why not 300 for the whole way?

That way I can get more smoke flavor and develop a little smoke ring. Also so the meat doesn’t dry out as much. I’ve found this method brings good results. Thank you

The lower the temp the deeper the smoke ‘soaks’ into the meat.

What was the raw wieght of the Turkey?
