Yum, yum! Homemade pasta! You reminded me of my grandma making homemade noodles for my dinner! It's great how you don't have to buy them in stores to save time and money. I like egg based noodles because they're delightful. You can use this pasta for different variations. My favorite ones are spaghetti with meatballs and chicken parm on spaghetti with red sauce. They are so mouth-watering. Overall, most of your pasta recipes taste amazing! Oh, and speaking of, you are qualified to work at any Italian restaurant that has pasta as one of the items on the menu, lol. Happy Valentine's 💕 day, and see you tomorrow!

Being Italian we make homemade pasta a lot and it is a big difference from store bought. My Nonna and mom did the flour well but as she got older she started mixing the dough and knead a bit in a food processor which I now do. Like you I make extra a freeze it freezes so well. Hope others will try your recipe they will be ever so grateful.

I remember when I was in school, I would make homemade pizza or pasta in cooking class. I enjoyed doing that even though it was a lot of work. But in the end it was worth the work.

i love your energy in the kitchen. i love people that are passionate especially about cooking. i have been cooking for many years and make just about everything homemade plus growing my own garden. love your show.
I have an old wooden clothing rack (for drying delicate hand washables) I sanitize it, and let it dry completely. Then I lay my cut pasta over the bars to dry. (or you can use clothes hangars to dry your noodles. Put plastic wrap on the bars so the pasta doesn't stick) No need to add more flour to the cut pasta. The bundles come off the rack completely dried with bend in the middlle and will fit sideways into a large plastic baggie for the freezer, or into a tall container in the pantry. You can also use the wide flat pieces for ravioli. Just lay them on the counter, put dabs of filling down the length (if it's wide, do two rows) then lay another long pasta on top of the whole thing and cut squares. Don't forget to seal the edges. These you'll want to freeze if you are not cooking them right away.

what do you prefer the thickness to stop at for Spagetti noodles? Can we supplment the italian flour with like a wheat flour to make it healthier? I need something for diabetics, and weight loss / PCOS Edit: do we also dust with wheat flour instead of the other one you use if we use wheat flour to make it?

I used to make pasta with my Littles and would roll the past up like cinnamon rolls and cut with a knife. Kids would unroll and places on oven rack to dry. Such great memories. 35 years ago in Boise.
