If you're a beginner (like me) watching this, I strongly recommend that you use a big bowl to incorporate the eggs and flour instead of the well technique and when it's completely mixed together then place it onto a board to knead it. I learned it the hard way.

@@tektoms What I said was that I made the recipe, while pointing out precisely what substitutions I made with the ingredients. Such information is often useful to others who read the comments and even to those presenting the recipes who often ask for viewers' personal suggestions. I then gave my evaluation of the result (rather than make it seem that the evaluation applied to the original recipe, which would have been inappropriate, and especially unfair to the chef in the video if my version of the recipe had turned out tasting like crap). I love it when people sit around with nothing better to do than troll people's comments on cooking videos. That certainly reflects a rich and meaningful life. And, it warms my heart when people end their comments with "LOL", as it really shows what a great sense of humor and joy in the hearts they have to literally be able to laugh out loud even at the most trivial and mundane things. It's so _awesome_ .

Thanks for this! The tips you give are invaluable for doing homemade pasta without a roller. I wish I'd looked at this video before I followed the Joy of Cooking recipe and method involving stretching the dough over the rolling pin. However, I will be using your method from now on, especially when making pasta for The Big Lasagna a la Samin Nosrat!

You made this look really easy. We don't have a table like yours to work on. So we have to come up with something. Probably have to use our table. This looks so good. We are going to try using our machine to make homemade pasta and sauce next Monday. New subscriber here.

@@angelik5167 oh goodness, I'm so late haha. So shortly after this in my culinary class, we got a demo on how to make pasta dough from scratch. I find the teacher's way a lot easier, you're looking for a sticky dough. about 1 large egg and 3/4 cup bread flour. if a little too sticky for you, slowly add in 1/2 tablespoon every now and then. this way, you can roll it out really thin yourself, it is a little frustrating because it's so stretchy it wants to pull back together, but it is still my favorite method. hope this helps!! :)))
