This came out very well, although the first batch of sugar crystallized when melting it with water. I then caramelized the sugar without water and it worked much better. One suggestion I have is list how much time it takes for the sugar to melt as it took more than 40 mins. The thickening of the caramel also took longer than the 3-4 mins you noted Otherwise, great recipe
