I thought beef tallow was the best thing to ever happen to fries--then I tried duck fat. Even more delicious!
Chef John is the GOAT of YT foodtubers :)
@Progorama We'll take your word for it.
Chef John, i have followed you from the beginning - this episode is the totally best episode ever, you are the manta ray of doing it your way - Salute, tallow FTW
not only the recipes are very good, but your delivery is extremely effective as well! you could make a terrific radio host Chef John!!
Nothing beats human fat for your dishes. I cooked some potatos with the fat that was sucked out from liposuction. Absolutely, incomparably succulent and delicious.
i love roast duck! this must taste amazing!
love all your recipes.
Dear Chef John, I am a 17 year old guy and I'm soon moving out of my parents house, I haven't had any trouble looking for an apartment, and soon I'll have my drivers license so no problem there either. I got one issue though, I have no idea what I'll eat, I've only cooked once or twice in my entire life and I'm a little intimidated by most of the dishes I find because they seem so complicated. So I would love you for all eternity if you made a series of easy to make and good dishes. :-)
this recipe is FANTASTIC - my grandmother used to make this for me when i was a kid, love it!!!
I love the way you say "potata" and "tomata" reminds me of my southern grama. Just started watching your videos and I'm already addicted. I have a food wish... to become a food personality! Watching your videos has inspired me in so many ways. Thanks Chef John.

OMG. ~____~ I am sooo freaking hungry and I LOVE duck skin, sooo good~!
Doubt if its much of a contribution to the chef or a few of the foodies who know a lot about food, but I just tried this thing where instead of using hot oil to dump potatoes in, I dumped em in cold oil, brought em up to a boil and kept it like that till they were golden brown. As expected they did soak up a bit of oil, not a scary amount(as I feared) But picture this- "rock like crust as thin as an egg shell, interiors as soft as the holiest of the holiest holes, in other words, a fried orgasm"
Looks great
I LOVE your videos)))
*drooool* @ duck fat. That looks GORGEOUS!
Chef John, Holy Cow! Jeez! Wow!
thanks john, this looks superlative.
I had the duck fat but no skin. I did end up using some bacon for the crisping and it was INCREDIBLE. I will be planning to do this again but with the duck skin as well...now I just have to find the right butcher.
Yum, looks delicious! :)
I just tried this with some turkey, and it was just delicious!
@agustn Really? I was thinking people should eat this 3-4 times a week.

remember, this is a technique, not a recipe. if you want, you can add some bacon bits, or some green onion... oooh, that would be good. After all, you are the james tudor of your green garlic duck fat home fried tubers
Chef John is my addiction
There's a place in Chicago called Hot Doug's that serves duck fat fries on certain days. They're legendary, seriously. I waited an hour and a half once just to get some of those fries, not to mention their hot dogs.
im drooling right nowww....... ahhhhh...yummy
Awesome
you made my hungry
omg.. im gna try this.. even if i don't have duckskin and the fats/oil out of it. i'll just use olive oil and bacon bits :)
Is there this kind of craziness in every subject of the world ?? I thought the subject of food would have some sanity. It may or may not be good for you but one things for sure.. It will keep you alive its FREAKING FOOD ! Chief this looks awesome, thanks for posting ! Don't listen to anything people say about your recipes or dishes you make. Don't listen to people when they say your rude too because.. After all you have your OWN Cooking Show they DO NOT !! So you have that right !! Enjoy!

You could call that skin Duck Bacon! ^,^ Looks pretty darn yummy.
Chef John, you're my second favorite chef ever. The first is my boyfriend, but we all know that's a biased opinion :)

Fantastic vid. I'm waiting for the next one. Can we do the same thing with chicken skin?
@muncher541 I agree...I guess it was just for presentation purposes. I eat sweet potato skin too!
My husband is jealous of you,I whisper your name whenever I am stuck for a supper idea!
@foodwishes Looks Ducking Good John.
Found some duck fat for sale at william sonoma, I am so trying out this recipe. Thanks Chef John.
That skin looks so good. MMPH.
Holy shit i got a chubby just reading the title of this video.
@TheKrypteian Thanks. Very Interesting.
God, you are an amazing human being!!!! I love duck fat!
Omg, I want!!!
This looks awesome! One question, can you cook normal home cut fries like this (with that little olive oil)? I've been shown fry them in as much as oil as to reach half their height in the pan (more or less). Yours just looks so much healthier (fat wise! hehe.
Yummy I made this without the duck fat, and i used onion instead. Too bad I don't have any duck fat, but I am trying to make it healthier anyways. I LOVE YOU CHEF JOHN YOU MAKE THE BEST FOOD IN THE WORLD
@OiTabemashou That´s right. The problem with the protein is the excess we consume and the byproducts of the metabolism of the animal protein.
I have some duck fat left in the fridge so this is a perfect recipe for me. Thank you.
Mmmm, I love shpuds! I'm Irish - it's in my blood! Therefore I'm entitled to eat all of this, lol
@skwerleyz I'm not against the oil part. In general I don't think eating the skin is too healthy.
@werwar666 Well, I agree that the meat in these days is very different form ago. Just look what the cows and the rest of animals eat and how the live. I also agree that a young person growing could eat meat to increase the amount of protein and some specific aminoacids needed in this stage of development. For grownups, meat should be occasionally eaten. And totally agree with you about the milk and dairy.
its look yummy *-*
@Cannedcorn49 im 17 too and the best way to learn to cook is doing it and experimentation
I just ate duck yesterday sooo .... THIS LOOKS AMAZING TO ME
Chef John, there is one thing you can do to make that bite better, feed it to ME! Oh my they look so scrumptious!!!
