    Nothing beats human fat for your dishes. I cooked some potatos with the fat that was sucked out from liposuction. Absolutely, incomparably succulent and delicious.

    Dear Chef John, I am a 17 year old guy and I'm soon moving out of my parents house, I haven't had any trouble looking for an apartment, and soon I'll have my drivers license so no problem there either. I got one issue though, I have no idea what I'll eat, I've only cooked once or twice in my entire life and I'm a little intimidated by most of the dishes I find because they seem so complicated. So I would love you for all eternity if you made a series of easy to make and good dishes. :-)

    Doubt if its much of a contribution to the chef or a few of the foodies who know a lot about food, but I just tried this thing where instead of using hot oil to dump potatoes in, I dumped em in cold oil, brought em up to a boil and kept it like that till they were golden brown. As expected they did soak up a bit of oil, not a scary amount(as I feared) But picture this- "rock like crust as thin as an egg shell, interiors as soft as the holiest of the holiest holes, in other words, a fried orgasm"

    I had the duck fat but no skin. I did end up using some bacon for the crisping and it was INCREDIBLE. I will be planning to do this again but with the duck skin as well...now I just have to find the right butcher.

    remember, this is a technique, not a recipe. if you want, you can add some bacon bits, or some green onion... oooh, that would be good. After all, you are the james tudor of your green garlic duck fat home fried tubers

    There's a place in Chicago called Hot Doug's that serves duck fat fries on certain days. They're legendary, seriously. I waited an hour and a half once just to get some of those fries, not to mention their hot dogs.

    Is there this kind of craziness in every subject of the world ?? I thought the subject of food would have some sanity. It may or may not be good for you but one things for sure..     This looks awesome! One question, can you cook normal home cut fries like this (with that little olive oil)? I've been shown fry them in as much as oil as to reach half their height in the pan (more or less). Yours just looks so much healthier (fat wise! hehe.

    @werwar666 Well, I agree that the meat in these days is very different form ago. Just look what the cows and the rest of animals eat and how the live. I also agree that a young person growing could eat meat to increase the amount of protein and some specific aminoacids needed in this stage of development. For grownups, meat should be occasionally eaten. And totally agree with you about the milk and dairy.
