Don't Overcook Thin Steaks! How to Grill a Thin Steak Perfectly Everytime

The ideal steak is at least 1 1/2 inches thick. But if all you could find was a thin steak (or someone brought one over) then this guide is for you.

    I live in a small town in Bolivia. To get good cuts of beef we usually have to go to the next city which is 3 hours away. I thought I would try what I can could get here at the local market and googled "how to bbq thin steak. I chose your video because it was short. I followed your instructions and it was delicious. Only thing missing was the red wine...next time.

    Ha, yes, we definitely have lots of other things we cook after filming that one item. It's just the behind-the-scenes things we don't show on camera ;). If we're going to fire that baby up we're going to make the best of that fuel and energy! And I'm glad you liked my wine choice! I love plugging under the radar wines :)

    We’re doing thin sirloin steaks today for the 4th. They’re in a carne asada type brine right now. What’s the temp you showed for your medium rare? 😊

    I would pull it between 125-130 degrees

    Yes. Just get the pan hot. I would oil or butter the pan, based on what kind of pan you use (I recommend a cast iron pan for best results). And cook just a couple minutes per side. If you have a digital thermometer just make sure to check the temperature of the meat and remove the steak when it reaches your desired finishing temperature based on how well you want the steak cooked.

    Few minutes for 1” thick steak I agree, but these guys, probably 4 flips every 30 sec is max.

    It's all going to depend on how hot the grill is and how cooked you want the steaks.

    Me thinks you drank too much of that wine, about a minute or turn frequently is not a specific time.

    Haha. Not the wine. You can't cook to a specific time because all steaks will be different and require a different time to cook. The point is to cook it to the temperature you want to finish it at, not a specific time. For me I cook steaks to medium rare, but for you it may be different, hence requiring different times.

    It was cooked to 130 and rested and we feel good about it. You can see pink in the video. When you first cut into any steak it’s going to start with a more muted color, especially on video. Try it out and see for yourself. Or better yet - just buy thick steaks to begin with ;)
