Fini Fini are particular to the Frosinone area, just to the south of Rome. Enjoy Maria's Grazia's recipe:
for the pasta: 200g each 00 and durum wheat flour, 4 eggs.
For the sauce: 3 best quality sausages, 500g pork spare ribs, 300g pork shoulder, 300g beef stewing steak, garlic, 400ml (one tin) tomatoes, 300ml passata, small glass of white wine, salt and pepper.

    I was born in Frosinone before immigrating to Canada. The pasta and sauce is still made on Sundays; a tradition that my late mother started and I continue with my family! I never get tired of watching these videos!❤❤❤

    Oh, did that dish of pasta look AMAZING!!! Fine pasta is my absolute favorite cut and seeing it served with a savory sauce and on its own special platter made my mouth water. Maria truly is a talented craftsman, but a “Pasta Granny”??? She is much too young to be a granny! TFS, Sharon🤗♥️🍝

    It is very clever to have a high surface area pasta specifically for being effectively a combination soup-and-carbs meal in winter. I am bemused that after adding all those chunks of dead pig to the sauce they weren't served with it, though...maybe they are a second course, or a week of sandwitches?

    Back in the old days, meat was something rarely eaten, and served on special occasions, so everyone filled up on the pasta first, then the meat was the 'secondo' as miseentrope says. And from ladies' comments over the years, I think priority was given to the men? 🙂🌺 best wishes, Vicky
