As a native American myself. I appreciate the brief history... I see a lot of comments about the bag... A lot of the reason why the bag was used.... Is generally the dry ingredients were mixed and kept in a bag because when indigenous people were hurded to reserves and settlements, more often than not they were forced to leave again and again and couldn't bring more than they can carry, so at least mixed like this (not always in a bag but old jars, old flour sacks etc, because it was easier to transport one mix, than it would be a bag of flour, a container of salt etc

In the 80's we did alot of traveling and camping, my mother would prep bread put the ingredients in bread bags and usually when we got to where we could make a meal the dough was great for wrapping around a stick and placed near the fire or small balls and toasted like a marshmallow, miss you mom😘

Hi Emmy, I usually don’t comment on these KZread videos. I watch them on my Roku and I would have to go on line to do this which I am doing now. I’m an old man and old enough to be your father, but I so much enjoy your videos and have really fallen in love with you, lol when I was a child, my father was in the military stationed in West Germany on the border with what was then East Germany and I went to the department of Defense schools there and I had a Korean school teacher who was so different from anyone I ever knew up until that point. I came from kind of an abusive background, my father was an army, sergeant and rough and gruff, but this teacher was so soft-spoken and kind she made an impression on me that I’ve never forgotten and ever since I’ve discovered your videos. I remember her every time. I just am in nostalgic Wonderland when I watch your videos so I had to reach out and thank you thank you thank you. I love your videos and yes, I’ll say it and I’ll say it out loud. I love you too. Keep up the good work.

Write on bag what more need to be added and you can just bake it later when you need it on trip and add the wet stuff and fats and you don't need to drag more then you need with you or buy flour and sugar and so on when you are where you going and then have to much you throw when going home or need drag home extra packages.

Most of the time I would lop off the other extreme as well. I must say the inner crumb which would shrink and dry up meant nothing to me. I wouldn't waste it, I always used every bit of everything I prepared. Thanks Emmy this was very informative. Much love to our indigenouse brethren. All the best Jim Oaxaca Mexico

The nostalgia of a shared bread/cake! We used to make one we called Herman the German, a spiced natural yeast cake which was so delicious. I’ve long since lost the recipe but it was so fun passing the starter between friends.

First guess on the bread proofing time taking 2 hours vrs 20 minutes would be the ambient temperature. Many tribes are in the southwest US and temps there tend to be higher. Just a thought.

Thanks for the friendship bread historical " and the Portable recipe also good for older homes, with older plumbing that can't tolerate pieces of bread dough washed down the drain...I think the yeast in the recipe expands in a warm dark water pipe, could be our imagination but good to have an alternative plan

Just for note if you do this recipe instead of using whole wheat and AP flour use just regular unbleached flour. This is how the rolls were made in school. Oh and switch out oil for shortening or lard

That is a lot of yeast for one cup f!our! Thank you for explaining how milk powder helps leavening! I made a hot cross bun recipe that included milk powder and I was surprised how much the dough rise compared to other bread recipes I had tried.
