Yep, I've lived in NJ all my life and this is deli pasta salad/deli macaroni salad. Everytime I try to make it at home, it always seems to be missing something. I'll be trying this. Thanks!
This is my favorite type of deli salad! This with a Jersey style sloppy joe is heaven!

I’ve seen people overlook pasta salad in favor of potato salad but I like it. I want to try this recipe now
I would definitely add hard boiled eggs, and another thing I like to add besides a little black pepper is some dried dillweed. It adds a little zip to it.

Hard boiled eggs definitely belong in a macaroni salad (in my opinion), we add those, plus cheese and black olives
I make mine exactly the same but i also add a can of albacore tuna and chopped green olives. Yummy!

Where I’m from in Jersey, this is macaroni salad because of the Mayo (and we add eggs and olives too).

Not weird at all. I like egg in mine and occasionally I’ll add either tuna or chicken if the mood hits.
I also put 6 tablespoon of olive oil in my water along with salt OMG that makes the pasta very flavorful
I will make without the celery but with hard boiled eggs.

Definitely not weird to add hard boiled eggs. Standard macaroni salad in our family was similar to yours except carrots instead of bell pepper, hard boiled eggs, tuna & paprika
