🔸 Ingredients:
1 ½ cups heavy cream, in two parts
8 oz of mascarpone cheese, in two parts
⅔ cups and 2 tbsp of coconut sugar
1 cup pumpkin puree
1 ½ tsp pumpkin pie spice
¼ tsp sea salt
1 tsp vanilla
🔸 Instructions:
In a large bowl add ½ cup of the heavy cream along with about 2 oz of the mascarpone cheese and the 2 tbsp of coconut sugar. Mix on medium speed for about 2 minutes. Set aside
Now add the rest of the mascarpone cheese with the remaining coconut sugar, 1 cup of pumpkin puree, 1 ½ tsp of pumpkin pie spice and ¼ tsp of sea salt. Mix on medium speed until very smooth. Next add the remaining 1 cup of heavy cream and 1 tsp vanilla and beat until soft peaks form, about 2 minutes.
Using a plastic quart size bag, add the mousse mix. Now cut a corner of the bag and pipe it into small 3-4 oz jars. Now top with the whipped cream and sprinkle with more pumpkin pie spice. Enjoy!
