I was sent this link by many friends today (I am Tamil SL) and I was a little worried before I clicked, but you acknowledged the dish’s place. All the purists don’t freak out. He never said this is the authentic version. It’s his interpretation and I think it sounds interesting. Food shouldn’t be limited to a set recipe we should be open for new ways to interpret foods without losing its original value.

Unsubscribing and not following this channel anymore for the way it is bullying small biz owners who have their own Chilli crisps 香辣脆 family recipes which is traditional and not something Momofuku’s chef invented out of thin air. @@trevinc yeah thats more because south india has a lot of influence on SEA culture, especially Malaysia and Thailand, historically speaking. Sri Lanka and South India have a lot of overlap in the culture, albeit distinctly different. Appams are a common street food in both places, for instance, with there being more difference in what you eat the appams WITH in the two countries. But even so, SEA and South Asia are more different than alike, and that includes Sri Lanka. It's like someone saying Mexico is South America because they speak Spanish or something.
