Dandelion and burdock could be one to try I once made a dandelion and burdock mead that turned out realy nice 😊
If you like the jasmine/lemongrass combo try doing a Japanese rice lager style beer with jasmine rice and sorachi ace hops

I my last 'Ginger ale' I used about 5 oz ginger root (and some lemon zest) in my usual ½ batch and got a quite distinctive ginger taste (my wife thinks it's a bit strong...). I thought it needed a bit more sweetness or body, so next time I will try a higher mash temperature...
I have 3 - 2 gallon batches of ginger ale going right now and I have to say, some compound in the ginger ale I make tears me up badly. Even after aging for 4 months the batches are pretty boubonic at around 11%. I barfed for the first time in 12 years after drinking 32 oz of it and then got covid :) not sure wtf im going to do with 6 gallons of the crap lol
