Crispy Chicken (or Pork) Cutlets | Home Movies with Alison Roman
There is nothing quite as satisfying as a crispy, juicy cutlet. It’s not something I make for myself very often, but when I do I’m reminded instantly of why I love it. This one is inspired by some of my favorite New York City restaurants, and is somewhere between a milanese and a schnitzel. It works with chicken or pork, and I serve it with dijon for dipping, lemon wedges for squeezing, cornichons for snacking, and dirty martinis for drinking. There’s a crunchy, bright fennel salad that goes along with it, and it’s my dream dinner. It’s special, and makes you feel a little glamorous even if you’re basically eating chicken fingers. You should make it for someone you love.

I can’t tell you how many times I’ve made this super easy crispy pork and chicken dish through the years. Sometimes I add different herbs and Parmesan but always keep it simple. My boys favourite of all time.. 👏👏🥰

To me (a German, who would have guessed) this is simply “Schnitzel Wiener Art” and it’s a childhood favourite. You could pre-coat the meat in flour before putting it into the egg, this makes for a fluffy crunchy crust, which to me is perfection! Love this Home Movie series, it’s like the good old TV times where you couldn’t wait for the new episode to finally come on ♥️

The most super quick recipe of cutlet I have ever seen and it’s really looking yummy!! The chicken breasts marinated in lime juice,black pepper ( I use minced green chili) ,minced garlic,ginger and parsley marination for at least 3-4 hrs will give a heavenly taste ,please try next time !!

In Poland a pork chop cutlet is like a standard Sunday lunch. I've had more cutlets in my life than any other dish. It's usually served with boiled potatoes and beets or sour cabbage or early cabbage boiled and then fried with butter... So the perspective of eating fresh crunchy salad with it, is fresh. It has to sink in. But great cutler skills, almost like my grandma 🙃

I grew up in Poland till I was 13, so same :) I loved a chilled cucumber slices salad with sour cream on the side

Hi, birthday twin! I had an overwhelming urge to make this, noting I had almost all ingredients already and a planned grocery trip would help secure the rest. This type of plate is not in my normal repertoire but it was DELICIOUS. Savory, tangy, punchy, full of flavors that were bold but also played really well together. I used celery in my salad and it was so good. Also this video made me laugh - a lot. Always love your content! 💕

Love making this dish. I usually add the seasoning in the egg mixture. I also put Parmesan and finely chopped fresh parsley into the egg mixture.

I love your videos. For Thanksgiving, I made your turkey, your turkey stock, your mashed potatoes, your green beans and kale. And I just made these pretty much at midnight with chicken. Sooo good. Ate with black eyed peas, Grey Poupon, and some Sriracha. First time using Panko. Your book is on the way! Using as a coffee table book. My mom loved the turkey, she asked me for the brine recipe.
I always bread mine with panko too. I think it sorks well better than fine bread crumbs. Yummy! ❤️❤️❤️

Made this at home, and I must say this is a very "forgiving" recipe. I don't think my electric burner got hot enough (and it's not level), so my cutlets didn't quite come out evenly browned in spots. Still tasted delicious, the panko really made the dish. Made me feel like I was eating schnitzel at a bierhaus again!

Took your advice to skip the flour step when breading for Parmesan Chicken. Totally worked. Actually, the panko adhered better! I admit to being a little skeptical but should have learned by now to trust you.

i feel the same way about the "If you CARE" brand!!
I made this recipe and here are my notes: I cooked the cutlets in a smaller pan and one at a time. My cooking times were much shorter and I ended up browning the breading in the pan and finishing the breasts in an oven for a few minutes. Other than that hitch, fantastic! Because I used a smaller pan (and made two breasts rather than one), I found it useful to clean out the pan between cutlets. This kept burnt breadcrumbs from sticking to the new cutlet. The salad was wonderful with just the shallots and fennel.
