CRISP CRUST French Baguette Recipe | Resep Roti Baguette

Cara membuat roti baguette yang krispi luarnya dan lembut dalamnya.
Bahan:
550 gr terigu serba guna
1 sdt ragi instant
1 sdt garam
400 ml air
Loyang roti baguette non stick coating size 38 X 32 cm
ukuran dalam 3 X ( 34 X 8 cm )

Cara pembuatan:
Campurkan terigu dan ragi instant, aduk-aduk sebentar, tambahkan garam dan air, aduk-aduk lagi sampai tercampur merata.
Tutup dan diamkan selama 1 jam
Setelah 1 jam adonan dilipat beberapa kali dan dibulatkan, lalu tutup dan simpan di kulkas semalaman untuk proses fermentasi.
Keesokan paginya
Keluarkan adonan, dan di roll beberapa kali dan di potong menjadi 3 bagian sama besar/berat, lalu masing2 adonan di bulatkan kembali.
Adonan di olesi sedikit dengan minyak sayur agar tetap moist, lalu ditutup dan istirahatkan selama 30 menit.
Setelah 30 menit adonan di bentuk sesuai panjang dalam loyang baguette 34 X 8 cm, lalu tutup dan istirahatkan selama 45 menit.
Di menit ke 30 adonan di scoring dengan silet (sebelum scoring bisa dikasih dusting flour - opsional)
Panaskan oven di suhu 210 C selama 15 menit.
Masukan loyang berisi air panas untuk membantu roti tetap moist
Proses panggang
Panggang adonan total selama 30 menit.
Di menit ke 10 semprotkan air kedalam oven berfungsi untuk roti tetap moist dan bagian luar menjadi krispi.
Di menit ke 20 keluarkan loyang yang berisi air
Setelah selesai panggang dinginkan roti baguette di cooling rack

French Baguette Recipe
Ingredients:
550 gr all purpose flour
1 tsp instant yeast
1 tsp salt
400 ml water
Instruction:
Combine flour and instant yeast, stir few times
Add in salt and water, mix well, cover and rest for 1 hour
after 1 hour, pull and fold dough few times, cover and rest in fridge overnight for fermentation process.
Next day morning
Roll dough few times and cut evenly 3 portion, then shape dough into ball.
Rub lightly vegetable oil to keep dough moist, cover and let them rest for 30 minutes.
After 30 minutes, shape dough according to baguette size, this one approx 34 X 8 cm, cover and rest for 45 minutes ( you can score them after 30 minutes, dusting is optional)
Preheat oven at 210 C for 15 minutes.
Place hot water on another baking pan to help bread moist
Baking
Baking total time is 30 minutes.
after 10 minutes, spray water to keep bread moist and to get crisp crust.
after 20 minutes remove water pan
once baked, transfer to cooling rack.
