Hi friends, sorry for the mistake, the correct amount of lukewarm milk in the dough is 140ml, 40ml shown in the video is wrong
Japanese Milk Bread|Shokupan|Apron
YUDANE DOUGH
Flour 25g / 2Tbsp
Hot milk 40ml
DOUGH
Honey 20g / 1Tbsp
Lukewarm milk 140ml
Instant yeast 2.5g
Flour 240g / 1,3/4cup
Sugar 15g / 2Tbsp
Salt 2.5g / 1/2tsp
Whipping cream 30ml
Unsalted butter 15g / 1Tbsp
Pan Size 10x10cm 2
Bake at 190°C / 370°F for 30-35 minutes

    @@CrossmoorMafia Supermarket bread here in Japan isn't all that fantastic. Very, very average for the most part. Some speciality bakeries do make some great bread however. Fantastic bread in fact. This kind of square bread is to my mind a stupid fad and nothing more. Useful for making sandwiches perhaps but not much else.

    While in Japan often breakfast, at a local cafe, would consist of an inch thick slice of this bread lightly toasted, slathered with butter, a tiny side salad and a delicious freshly brewed cup of coffee with a thimble-full of heavy cream on the side. It was " Morning A" on the menu. "Morning B" added half a hard boiled egg and a dab of mayonnaise. Absolutely delightful.

    "Shokupan" means "bread for eating". Which always makes me wonder what the hell else they're doing with bread in Japan.

    I've read that in certain religious rituals in Japan, certain types of cuisine is made as offerings to ancestors/dieties. I don't understand Japanese religion well, but I know that it has used ritualistic recipes as ritual offerings before, so that may be where the distinction comes from.

    Made this yesterday. It was fantastic! And surprisingly easy! Highly recommend if you have the time. You don’t need a square bread pan either - I took the rolls from the last step and proofed them in a regular loaf pan side by side. Turned out perfect.

    I make this recipe in my bread machine all the time and it turns out great. No need to proof yeast. Just add ingredients in order specified by bread machine (i.e. liquids first, then dry stuff and yudane, and yeast last). I use the French Bread setting for a 1 lb loaf with light crust setting and it's perfect.

    Fun fact, Glade discovered one of the key components to it being so clingy was a carcinogen so they removed it from their products and it is the reason why it's not so sticky anymore.

    @@asellus.x that makes sense! When I worked at a higher-end restaurant I was always in awe of their cling wrap because it was super strong and sticky compared to what I had at home. Now I guess I know why; big label products purposefully remove it so you end up using more and then buying more. What jerks!

    @@lucgregoire4015 I thought it only caused cancer when consumed in a high enough quantity (such as daily smokers) by digestion, inhalation, or other means of intake. If the carcinogen is in the wrap, and your not literally cooking the food with the wrap mixed in, then you should be fine as long as you wash your hands.

    im not from canada but we sometimes store milk(also almost any other milk related liquid products) in plastic bags too most of the time it tastes just like the "normal" milk but sometimes it kinda tastes like plastic...i dont think its healthy tho

    The bread/cake cube pan is ingenious because of a special lid that prevents the top from rising, as well as baking it evenly from all directions.

    I just made this and it was so tasty! I had some problems with the yeast not making the bread rise enough, but it was very soft, though dense, on the inside. This is my second time baking bread and it was delicious!

    You didn't need to add more milk? It was way too dry for me. I double the milk. Did you use any type of bread flour or Japanese bread flour?

    @@ThefutureselfLah I used bread flour from an American grocery store, and I didn’t add any extra milk the first time. It may be a little dry now that you mention it… When I knead or shape it though, I don’t use any flour

    i find more and more, that no-voiceover videos are better. sometimes, you just get sick of hearing people talking.. it's like a recipe website that you have to scroll through pages and pages of text about their journey to the hinterlands and their childhood memories of eating the recipe.

    Followed this recipe to the tee, hydration ratio seemed off since I started off with a really wet dough. Had to add an extra 100g~ of flour to get the right consistency as seen in the video. Also, I’d suggest to anyone following the recipe to use 5-8g of yeast instead of 2.5 as my dough had trouble rising properly. I’m pretty sure all these problems are because Japanese bread flour is a lot different than flour here in North America. Different ash content, protein content, etc.

    As someone who made a lot of bread on my college course, when making bread its best to continue kneading the dough instead of adding flour it will slowly get less sticky and result in a nicer bread overall. It could also be why it didn't rise properly. Hope this helps :)

    The problems with rising can come from bad or old yeast, you can check if it's good by doing some tests before

    I think it is because is says to use whipping cream but clearly they use sweetened condensed milk or something similar in consistency. Definitely not as liquid as cream is tho.

    Hey so I’m really into baking and I decided to try this out I’m basically half way through it at this moment!! I’m waiting for the bread to rise currently and just taking a break and wow I respect the amount of work you put into this because it is not as easy as it looks!! I had a bit of trouble along the way but found my way out of it with knowledge from my past culinary class. Update: finished it up the next day because I got tired but ended up putting a twist on it with a thin coat of egg wash on top with cinnamon and sugar on top! It came out absolutely amazing

    I was referring to the Yudane. It takes ~4.5 Tbsp of flour, not 2, if 40 ml of hot milk is used.
