Creamy Chicken & Bacon Pasta
Ingredients -
Bacon, Chicken and seasoning -
6 - Streaky Bacon Rashers
1 Tbsp (20ml) - Olive Oil
2 - Small Chicken Breast, Butterflied
1 tsp (3g) - Onion Powder
1 tsp (3g) - Garlic Powder
1 tsp (3g) - Smoked Paprika
Salt & Pepper
Pasta & Sauce -
350g (12.3oz) - Bucatini or Pasta of Choice
1 Tbsp (14g) - Unsalted Butter
2 tsp (10ml) - Olive Oil
1 - Red Onion, Fine Diced
6 - Garlic Cloves, Chopped
5g (0.2oz) - Flat Leaf Parsley
1 Cup (250ml) - Chicken Stock
200g (7.05oz) - Creme Fraiché
Parmesan Cheese or Pecorino Romano
Flat Leaf Parsley & Basil To Serve
Salt & Pepper
Method -
1. Bring a pot of salted water to a boil and cook for 1 minute less than the packet instructions.
2. Add the butterflied chicken to a bowl, along with the oil, seasonings, salt, and pepper. Mix well to combine.
3. Dice the bacon into medium-sized pieces. Place a pan over medium-high heat and add the bacon. Fry for 3-4 minutes or until the fat has rendered and the bacon is golden and cooked to your liking. Remove from the pan and set aside.
4. In the same pan over medium-high heat, add the Chicken and sear for 4 minutes on each side or until cooked through (internal temp (74.c-165.f). Remove, rest for 5 minutes, and slice or dice.
5. In the same pan again, back over medium heat, add the red onion and sauté for 4 minutes or until transparent. Add the garlic and cook for 1 minute. Increase heat to medium-high, deglaze with chicken stock, and reduce by 1/3. Add flat leaf parsley and creme fraiché. Check seasoning, mix to combine, and simmer for 4-5 minutes or until thick.
6. Add in the cooked bacon, Chicken and pasta and mix well. Grate in parmesan or pecorino Romano cheese and mix thoroughly.
7. Serve in bowls and garnish with flat-leaf parsley, basil, more cheese, and cracked black pepper. Dig in.

Am I the only one who is a little disappointed that he typically no longer whispers the amount of pepper cracks? It’s like he wants the whole world to know his secrets.

Chef John has a rule for bacon that I follow, you wait until it foams which means the fat has rendered out. I have learned so much from you internet chefs. it makes SUCH a difference to see food professionally made! thanks so much 🥰
Omg Jack that looks absolutely delicious,I love a simple recipe that ready in under 30 minutes and using creme fraiche instead of cream brilliant idea most definitely going to add this recipe to my meal plan 🍝
I love how you timed this one. As much as I love cooking, it regularly takes me forever to cook dinner so I'll be sure to try this recipe out!

Lordy - nearly tried to dive through the screen to get at this one! Nice work Sir!
❤❤😋😋 You should start considering marketing your recipes to supermarkets so consumers can pop the ready made meals in microwave or oven

Hehe so yummy!! It won’t take me 25 min (well 22)…. I’m so slow! But then, I have some physical illness/disability stuff happening so I prep things and then start and stop the KZread video as I’m slowly gaining more confidence, which you are giving me because your recipes work out so amazingly!!!! This looks really good. I am unable to find Creme Fraiche what might I be able to substitute instead? Thank you.
And that is one mealprep for the next week if one would stack some mixed veggies on the side and make a bit more sauce. :)
I'm so happy.......I JUST FOUND YOU❤❤❤❤
Looks good as always Jack and thanks for doing some recipes without cream - I know I'm weird but I don't like the taste or richness of it!
I need someone to make this for me
Does adding the creme fraiche to a hot pan risk making it separate? I've found that adding dairy like cream to a hot pan for a sauce risks making it curdle.
What cookware and ovenware do you use ? Do you prefer non stock or stainless steel induction cookware ?

Can you please cook a pasta bake Jack?
Hi Jack what gas cooker is that?
That looks so delicious! Your pastas are always my favorites. Thank you for another "must make" recipe, Jack. 🤤 PS: Everyone should touch their meat from time to time. No shame in it. PPS: Miss the whispered cracked black pepper but respect your decision to not use it anymore. 😭
seeing those hexclad pans popping up everywhere now

Where do ypu get crème fraîche in Canada?
I have a question. As someone whose family doesn’t eat pork, when substituting turkey bacon in for this (or similar recipes) where you’re meant to render out the fat, how would you replicate this? Since turkey bacon doesnt seem to produce nearly the same amount that normal bacon does.
@ChefJackOvens
9 күн бұрын
Add oil to it to replicate the rendered fat
If I'm unable to find Creme Fraiché , Can I subtitute it with Heavy Whipped cream instead? If so the same measurment amount 200g (7.05oz) . Thanks for sharing

Would also recommend Greek Yogurt, it has that slight edge (that you looking for) to the cream. Whatever you use it will be YUM, don't stress, simply enjoy what you made.

Please- What is a Streaky Bacon Rasher? Thank you!
@ChefJackOvens
9 күн бұрын
Streaky bacon comes from the pork belly. Most supermarkets sell it now. If you can get it, back or middle bacon is just as good for this dish
Yummy but please for us dairy free pepole it would be lovely to have a creamy sauce that doesnt suck
Is that a Baltic accent?
