Pasta Alla Norcina
Ingredients -
3 Tbsp (60ml) - Extra Virgin Olive Oil (EVOO)
450g (1lb) - Italian Pork Sausage, Skins Removed and crumbled
2 - Garlic Cloves, Crushed & Finely Chopped
125ml (1/2 Cup) - Dried White Wine
50g (1.7oz) - Pecorino Romano
250ml (1 Cup) - Thickened Cream
400g (14oz) - Penne or Rigatoni
Salt & Pepper To Taste
Pecorino Romano To Serve
Method -
1. Bring a large pot of salted water to a boil and cook the pasta for 1 minute less than the instructions. Remove and drain-reserve 1 cup of pasta water.
2. Add extra virgin olive oil and crumbled sausage in a pan over medium-high heat and cook for 3-4 minutes or until browned. Add in garlic and cook for 1 minute.
3. Deglaze the pan with white wine and cook for 2-3 minutes or until reduced by 2/3. Reduce heat to medium and add half of the pecorino Romano cheese. Mix to combine and cook for 1 minute. Add the cream, bring to a simmer, reduce heat to low and cook for 5-6 minutes. Adjust seasoning.
4. Add the cooked pasta to the sauce and toss to combine. Mix well with the remaining pecorino Romano and pasta water to the desired consistency. Remove from heat.
5. Serve in bowls and garnish with pecorino Romano and cracked black pepper. Dig in.

Hmm. Mushrooms would be good in that. I might also add some red bell peppers for a bit of color and sweetness.

Thanks for this recipe, Jack! As someone who can't have beef or pork, do you have any suggestions for kind of sausage to substitute here? What do you think of using chicken or turkey sausage?
Oh that looks so easy to make, mushrooms you mention at the end that would be great too. I can get plain pork sausages from my butcher so this might just have to be trialled. Thank you Chef Jack…oh and was that “whispers” 20 cracks worth? I’ll say it haha I actually say it along with you but nothing today 🤣🤔

Nice recipe. I'd question adding cheese so early initially. I would save all until after the cream. You dont want to cook the cheese

The pan is turned down at that point. You should try it. It creates two different flavours in the process it’s added

I've got to say cream and sausage does sound very strange to me 🤨🤔 But I'm willing to give most anything a try before I say I don't like something . If you can get ground pork sausage meat then that’s better. Like I said in the video, I couldn’t get it

You know its funny, a lot of homecooks say "feeds 4 people" and i look at it and im like, you mean "feeds 1 at max, 2!" Im also skinny btw. I weigh 80KG at 6.2.

i actually have to disagree cuz i would not be able to finish that whole pan of pasta, thats the serving size at restaurants and its too much
